Have a nice day everyone! Today I want to show you the recipe for lemon cookies, but I decided to add the finely chopped peppermint to the cookies and not mistakenly.
The cookies turned out so rich, lemon and peppermint intertwined into a rather unusual form of taste. In this capacity, the cookie wins any simple cookies.
The cookies turns out to be very soft and slightly moist with a crisp on the outside. Also, cookies can be poured with lemon glaze, as I did. So the cookies turns out more fragrant with a gentle note of taste of a lemon glaze.
For the recipe we need:
Butter -180 g
Brown sugar - 175 g
Eggs - 1 pc.
Lemon - 1 pc.
Flour 250 gr
Sugar powder for glaze
Mix the soft butter with brown sugar until smooth. Rub lemon peel, and cut mint into small pieces. Add mint and lemon zest to the oil mixture and mix everything. Then add one egg. Mix everything and add the flour. Knead the dough with your hands. You should get a dense and elastic dough. The finished dough is wrapped in a food film and sent to the refrigerator for 1-2 hours. Then take out the dough from the refrigerator, divide it into equal parts and roll it into small balls and lay it in a form covered with parchment paper. Bake cookies at a temperature of 180 degrees for 10-15 minutes.
While the cookie is cooling off, cook the lemon icing. In a deep cup squeeze half a lemon juice and mix with the powdered sugar. You should have a thick mass. Pour the glaze over the biscuits and sprinkle with crushed mint. Wait until the icing hardens and serve to the table.
Lemon cookies are a wonderful fragrant pastry, which I like, I think absolutely everyone. This cookie is reminiscent of a cake, as it turns out so soft, and inside is a bit wet with a fragrant lemon glaze covered on the outside.
