If you have 5 minutes, you can whip this delicious favorite condiment up in healthy style!
So, you've read the ingredients on the back of your purchased bottles and want something edible for your sandwiches/salads and children's noses!
Ya I hear ya... some of that stuff can be pretty scientifical-mumbo-jumbo and I don't want to eat it either!
But I LOVE MAYO soooo, what now? Healthy mayo in the store can be kinddda expensive!
Mayo doesn't need to be bad for you! It doesn't need to be a guilty pleasure or something you need to hide alone in a locked, dark room with a spoon... -_- I don't judge you....
So, we just have to get a blender out and do it ourself, right?
But Cece, I don't want more work!
Ya guys, I know. Me neither. Well, first of all it's not work to me, it's play ;) But I hear you!
Let's make it super easy!
OK so this was legitimately so easy, I didn't even take any pictures for you so just grin and bear. You're going to have to use that imagination for this one!
What you need:
- 1 cup soaked cashews (soak in filtered water overnight)
- 2 cups coconut cream
- 1 lemon (just the juice) or sub with ACV
- 1 cup sunflower oil
- 1 tbs mustard seed (add more or less depending on your preference!)
- Salt and pepper to taste (I always use Pink Himalayan sea salt!)
What to do:
Blend everything in a high speed blender or food processor.
That is actually it! It's already done! Spice as you want with more mustard, pepper and salt!
Pro tip: it tastes like worlds and mountains better after being chilled in the fridge for a couple of hours!
Add chili for spicy mayo
Add chipotle for chipotle mayo
... see where I am going with this, easy! ;)
Add to salads like my new, delicious cauliflower bacon salad!
When it's this easy, I just make a batch to last me a meal or two and then I always have fresh, delicious not chemically condiment to put all over my meals!
