Hi welcome to Negros we are now on the 24th post to promote my province under food category!
This time let me tour you to the " Food Basket " of Negros " The Valladolid City " and let me introduce to you " The best Ginamos " in Negros "
Valladolid, officially the Municipality of Valladolid, is a 4th class municipality in the province of Negros Occidental, Philippines. According to the 2015 census, it has a population of 37,833 people.
Known as the "Food Basket of Negros Occidental," the municipality celebrates its fiesta every 28 February

What is Ginamos?
Ginamos is a Hiligaynon term Bagoong in tagalog and shrimp paste in English.
In Visayas Ginamos is a famous side dish made of small shrimp we called that in Hiligaynon Hipon
Some people love to eat ginamos in raw by just simply mixing it with kalamunding or calamansi, then add small sili for spice flavor.
Shrimp paste is used to add flavor in some filipino dishes like adobong takway or kangkong, pinakbet, kare-kare, bolied okra, ginataang langka and many more.
You can also sauté the shrimp paste we called that "ginisa nga ginamos " with lot of sili. Which is perfect to eat partner with hot rice and other viand.
The shelf life of Ginamos last for how many months or even a year. Some of my friends working abroad or migrating never forget to bring a jar/s of ginamos when they leave the Philippines.

Ginisang ginamos is a perfect partner with raw mangoes or indian mangoes. That will serve as your side dish after your lunch or snack in the afternoon.
Take note:
- make sure you don't have allergy in shrimps
- avoid eating too much if you have hypertension " might trigger high blood ''
- unpleasant odor " toothbrush after eating if you are on duty" "Wash your hands thoroughly to removed the smell"
I have allergy when it comes to eating shrimps, yet no one can stop me from eating Ginamos or some viand with ginamos. I always bring anti-histamines every time I visited certain places and put it inside my medicine kit.
Bit funny but it's true I only stop eating if I can like that there is something that crawling insects on my face. That the sign of my allergy is about to begin.
