#6 Promoting Negros / Food Category / The Bacolod City Famous Delicacy " The Piaya "
Piaya (Chinese: 餅压; Pe̍h-ōe-jī: piáⁿ-yā; literally: "pressed pastry"), sometimes spelled piyaya, is a muscovado-filled unleavened flatbread from the Philippines especially common in Negros Occidental where it is a popular delicacy. It is made by filling dough with a mixture of muscovado and glucose syrup. The filled dough is then flattened with a rolling pin, sprinkled with sesame seeds and baked on a griddle.

Piaya is the famous delicacy of Negros to be more specific Bacolod City have the best piaya.
Because Negros is known as major producer of sugar from its vast field of sugar cane. Negros made a delicacy to promote the sugar industry in Negros. They created and innovated what sugar can produce, where they discover this delicacy a flattened dough filled with muscovado cooked over hot flat metal surface.

When I was in Elementary the Piaya cost 50 centavo with one original flavor. But now one piaya cost 3 to 5 pesos depends on the location of the seller. " Bongbong's Pasalubong Center and Meczi Bread and Pastries shop " are the famous supplier of the said delicacy nowadays. You can buy Piaya which is packed already or you can buy and eat the hot piaya came from the hot grilling pan. One pieceof piaya cost 4 pesos for origanal flavor and 3.50 for ube flavor. Now they are making other flavor aside from what I mentioned. But for me I will stick to the original flavor because no flavorings added.

Piaya is now exported locally in different places here in the Philippines. I have no idea if it is exported internationally but I have friend who bring Piaya from Philippines going to Dubai.
The best time to eat piaya is when it's hot then partner it with hot beverages like chocolate or coffee.
Be careful when it's still hot, because the filling can burn you lip or tongue. I already experienced that and its not good when you have burn tongue a feeling of discomfort every time you swallow.
I can highly recommend this delicacy to those people who visited or who would like to visit Bacolod in future. You must try it and we don't just produce sweets, we initiate sweet smile as well as we are known to that signature as " City of Smile "
