One the best urban food " Linupak na Saging or Mashed Banana "

Last month together with set of my friends we went to EB Magallona Negros Occidental. Its our plan last January 2018 to visit one of our friend's home in secluded remote barrio. From Bacolod City capital of Negros it will take 2 hours before reaching his place. We ride on a bus from North bound Terminal " Vallacar Ceres Terminal " .

While on our trip we are very excited what we can do on that day. The main reason why we hangout is to enjoy quite some time. We bought our food for lunch at the wet market, because it is part of the plan. We have 6 pcs " Bangus or milkfish ", 2 kilos of pork meat, 2 kilos of chicken meat, and our ingredients for our main purpose why we go their is to try the famous urban food" Linupak na Saging ".

Linupak na saging is not very common here in rural areas. Because you need " Lusong " like a big mortar and pestle made of hardened wood. Used to smash rice crop and by making Linupak. Most of the people living in remote barrio have this " Lusong ". This is one of the best comfort food and the last time I ate this was 7 years ago. That's why I am very excited on that day.

What we need before making a Linupak na Saging

Ingredients & other needed

Unripe banana "required banana is only Sab-a " " cooked in boiling water "
Brown Sugar
Butter
coconut Strips " Butong "
Evaporated milk or powdered skimmed milk

banana leaves
"Lusong" to mash the cooked banana
Extra strength and effort " The pestle is quite heavy you might experience stiff on your arm after "

Things to do

  • clean the wooden mortar and pestle
  • prepare the unripe and cooked in boiling water for an hour
  • Then peel the cooked Sab-a and put one piece at a time while mashing it in Lusong
  • don't overload the mortar to avoid spills
  • mashed and mix the ingredient
  • put butter, evaporated milk and brown sugar
  • Mixed it well, you can use spoon to portion the mashed ingredients
  • Do it batch by batch
  • Don't push yourself that match slowly but surely
  • Taste your product the if needed to add sugar, butter or evaporated milk
  • Set a side the first batch by putting it on a banana leaves and do the same process until you consume all the cooked bananas.

I wasn't able to try to smash using the " Lusong " in Hiligaynon smash means " Bayo " to pronounce it properly same with " Lusong " Stress each syllables do not pro-long.

While they are busy making Linupak I am preparing the coconut juice as well. By mixing the coconut juice, content, and condensed milk if you don't want to add sugar. If you like evaporated milk you need to add some sugar.

That day the weather is good and the sun is brightly shining. Where it is the best time to hangout or bond with your friends. We should not forget to give ourselves to relax, enjoy, unwind, free from stress and worries. A place like this away from modernization, noise and air pollution, heavy traffic, and etc. Will bring calm/peace feeling that will refresh your body physically and mentally. Plus a set of friends that you can share or talk your experiences while eating together. That you are all on the same state of being happy is extremely awesome.

Time to share and eat the food that we prepared. We have " sinugba nga bangrus or grilled milk fish", " Native chicken Tinola " More delicious compare to an ordinary chicken, " Bihon ", " Mechado Filipino food ", Tropical fruit beverage " Coconut juice ", and my all time favorite " Linupak na saging. "
