#8 Promoting Negros / Food Category / The Cadiz City Good Quality " Uga "

Hi welcome to Negros we are now on the 8th post to promote my province!
Now lets visit the city of Cadiz no.1 best producer of quality dried fish in Hilgaynon translation called Uga undergo the process of drying under the heat of the sun.
Most of the people in Cadiz used Uga as source of their living. They manually processed the captured fish from the sea or they buy the fish by Banyera one laundry basin from the sea port of fisherman's called Pala-pala it is a direct selling of fish and other sea creatures. You can buy one Banyera for lesser price compare than buying it from the wet market. But you have to come early because the bidding starts from 3 o'clock in the morning until supply last.

On that time as well they start the processing of drying by removing first the internal organs of the fish. No need to add salt because it is came from the salty water already.
They put the processed fish and we called that as Pakas removing internal organ and drying called "Bulad sa Initan" on a large metal or bamboo screens. The drying last for several days until the desired appearance is ready to sell in the market.

At the market you were able to see different kinds of dried fish. There are large uga called pinakas, tabagak the very common dried fish, lukos na uga or dried squid, dangit small dried fish and many more.

Cadiz local Government support their local communities by providing livelihood in making dried fish. The said products are domestically exported and they innovated new products from dried fish. Like special dried fish in a can or glass jars and they sell it internationally as well.

We cannot deny that Cadiz City is expert to this field of processing dried fish.

If you are familiar with the poisonous puffer fish, we called it Butete people of cadiz know how to process that and they perfectly produce a menu and included it during fiesta. The Dinagsa festival is a festivity same with sinulog, ati-atihan, and dinagyang. They celebrated the said festival during the last weekend of March, where many people love to come because of the "Lamhitanay Pinta" means if you are on that day you are not exempted from receiving smudges of paint from your clothes or any part of your body except vital parts like eyes that might cause harm. People should follow the rules of using water based paints, enamels are not allowed and you might be sanctioned if you were caught using prohibited types of paint.
