Vegan High Protein Lettuce Taco Boats 🌮 - Food Photography

Morning everyone! Today’s recipe is being posted a bit earlier than usual, because I’ve decided to start getting my recipes out earlier in the day so I have more time to work/get things done later in the day. Shifting my schedule around bare with me 😅

This delicious recipe is something I enjoy, but do not eat often, lettuce tacos! I usually eat these without cooking anything and just use raw nuts as the base for meat (which turns out to be a recipe much higher in fat... no bueno!), however I decided to switch it up and these were so delicious! 

These are perfect for summer dinners because the lettuce is so refreshing and crunchy, with the raw veggies, avocado cream & taco sauce it’s just YUM all day long. 🙌🏼

I hope you all enjoyed Independence Day, and celebrated with a vegan meal! I was considering going all out and making black bean burgers, but it was hot, and I wanted something refreshing. That recipe will have to wait for another day! 

Vegan High Protein Lettuce Taco Boats 🌮

Ingredients:

  • 3 romaine lettuce leaves
  • sliced cucumber
  • sliced tomato

For the taco “meat”:

  • 1 cup of cooked lentils
  • 1/2 cup soaked walnuts
  • 1 tbsp cumin powder
  • 1 tsp liquid smoke (or 1 tbsp smoked paprika)
  • 1/2 small white onion, roughly chopped
  • 1 tsp garlic powder
  • salt & pepper to taste

For the Avocado Cream:

  • 1/2 avocado
  • juice of 1 lime
  • 1 Roma tomato, diced
  • 1/2 cup water

For the Taco Sauce: (makes about 5 servings)

  • 1 potato, diced
  • 1/4 cup chopped onion
  • 2 chopped carrots
  • 3 tbsp nutritional yeast
  • 1 tbsp garlic powder
  • 1 cup almond milk
  • 1 tsp cumin powder

Instructions:

  1. for the taco meat; add all ingredients to a food processor & pulse until well combined/chunky
  2. for the Avocado Cream; add all ingredients to a blender & blend until smooth & creamy
  3. for the taco sauce; add potato’s, onion & carrot to a pot and cover with water. Bring to a boil & cook until potatoes are fork tender
  4. When cooked, strain & add to a blender with the rest of the ingredients, and blend! If it is too thick, add some water to thin it out to your desired consistency!
  5. Serve it up in some romaine lettuce boats! 
  6. ENJOY! 🌮

I have never had tacos in my life! It's not that well spread in Europe. I already wanted to make them but somehow haven't managed yet. I like the idea of making them in the lettuce leaves and your meat is amazing!!! It's great that you make it yourself and don't buy it.
