You Wouldn't Date Someone Who Didn't Treat You Right-- So Why Eat It? Delicious Granola! (Vegan/Gluten Free!)

The tension in the room is thick. You nervously bite your lip as you try to hold yourself back from the growing urge to take hold of that one thing that will satisfy the craving.

"But you're the one that gave me that extra 5 lbs before my trip last month." You manage to whisper.

And potato chip bag says to you seductively,

"Ya, maybe I did but it was worth it, wasn't it?"

You let out a sigh, look at the familiar bag with love-struck eyes as you reach across to embrace it.

Got you again!

You're looking at that shiny bag with all the ingredients you can't pronounce on the back and you're thinking...

"I really shouldn't let you in again."

See, I know you! You're looking for a snack you can get behind. Something easy but delicious that's also you know-- relatively good for you.

I am here to solve that for you amigo!

I swapped out my beloved potato chips for this killer granola and let me tell you-- I am doing just fine without the added sodium, saturated fat and oil on my shirts thank you very much!

Wanna give it a go? It's actually extremely easy -- you don't have to go HAM like me and MAKE your own coconut mylk! (But it's supa delicious if you do!) 😉

Why blueberries?
Blueberries have a relatively low GI score so if you're looking to lower your sugar intake they are a perfect companion for a bite of antioxidant rich sweetness! Feel free to switch out for your favorite berries instead!

No sugar?
The mesquite will handle that for you but if you want to get a bit sweeter, try agave or maple syrup!

What You Need:


  • 3 cups gluten free oats
  • 1 cup almonds
  • 1 cup sunflower seeds
  • ½ cup sesame seeds
  • ½ cup pumpkin seeds
  • 1 tbsp cinnamon
  • 1 tbsp maca powder
  • 1 tbsp mesquite powder
  • ½ cup flax seeds mixed with 1/2 cup water
  • ½ cup chia seeds mixed 1/2 cup with water
  • 1/2 cup coconut flakes
  • 2-3 tbsp coconut oil

What To Do:

This is so easy you guys!

  1. Soak the seeds and nuts the night before in jars (make sure there is enough room for them to expand from the water)

  2. Drain the water from the jars and rinse all the nuts and seeds
    (Optional bake them for about 10 minutes prior to adding to the granola for extra crisp)

  3. In a big bowl, pour in the oats, cinnamon, maca, coconut flakes and mesquite to start

  4. (Optional) in a food processor, pulse the nuts and seeds so they become smaller pieces

  5. Add the nuts and seeds to the big bowl with the flax seed and chia seed mixtures and stir everything together with the coconut oil

  6. On some wax paper, spread out your mixture evenly and bake for about 20 minutes or until the granola is crispy.

Serve with your favorite non-dairy mylk! I use freshly made coconut milk and of course serve in a coconut with some organic blueberries!
