🥑Introducing Handheld Avocados! 🥑 (Vegan/Gluten Free/Low Carb/Keto)

You deserve that avocado in your mouth! You've worked hard for it so skip that boring toast stuff and get on this!

I genuinely thought I didn't like avocados for the longest time which kind of made me a black sheep of the vegan world.😉

Avocado came out of the woodwork like this golden-laced prized entity here to make vegan food more delicious (with its fatty glory-- but in a good way!)

Forget about boring avocado on toast!

So, you've probably all had avocado on toast... That's a common recipe everywhere but that toast is usually gluten-filled and even it's GF, there's still likely yeast, sugars, and lots of carbs within its walls. If you're wanting to avoid all or any of those things why not just skip the carrier service?

I got thinking about this when I started eating like a kilo of avocados a day. I made a delicious stuffed avocado boat which was great but then the idea hit me...

Handheld avocados!

(These are heavenly!)


What You Need:

  • 1 perfect avocado
    (it needs to be ready but a little bit firm to the touch-- not hard-- you should be able to gently press into the skin)
  • 1 cup butternut squash (steamed and squared)
  • 1/2 yellow onion (diced)
  • 1-2 garlic cloves (minced)
  • 1 tbs roasted pumpkin seeds
  • 1 tbs vegan cheese
  • 1 tbs "walnut meat" recipe here
  • 1 tbs tahini
  • 1 tsp lemon juice
  • 1 tsp chili pepper flakes (optional)
  • 1 tsp coconut oil

What To Do:

  1. Cut the squash into squares and quickly steam them so they become tender
    (about 3-5 mins in a steaming basket over boiling water)
  2. In a skillet, pour 1 tsp coconut oil and add the minced garlic and diced onions to medium heat
  3. Let the onion lightly brown
    (about 3 minutes)
  4. Add the squash to the onion and garlic
    (you can add some salt and pepper here if you like!)
  5. Let the flavors blend for a couple of minutes then remove from heat and set aside
  6. Cut the avocado in half and remove the pit
  7. Take a spoon and push it into the sides of the avocado as if you were going to scoop it out, but instead of pulling up, use the spoon to pull the fruit away from the skin on all sides
    (it will slip out once it's separated from the skin)
  8. Mix the pumpkin with the tahini and lemon juice
  9. Place the avocado in a bowl and spoon the pumpkin mixture into it
    (hold the base of the avo as you fill it because it's slippery and might move in the bowl!)
  10. Top with vegan cheese, pumpkin seeds and walnut meat

Sprinkle with chili pepper flakes (optional)

There you have it! These are super fun to share with kids (they can make their own!)

Of course, they can be a bit messy but, hey, what can I say?!
