Feel Good Crispy Kale Chips! (Vegan, Gluten Free, Low Carb) 💚

You're hungry and you're looking for a snack that you can feel good about but that's also super quick and easy to make, right?

Kale Chips:


Kale chips are actually one of my favorite, easiest snacks I can think of to make and they are pretty fantastic on the health side of things!

You can season them, you can dip them, you can save some for later and you can feel good about chomping down on them! That's a win if you ask me!

Heathline grants us some insight into just how nutritious that kale is for you!

Nutritional Info for 1 cup of raw kale:

  • Vitamin A: 206% of the DV (from beta-carotene)
  • Vitamin K: 684% of the DV
  • Vitamin C: 134% of the DV
  • Vitamin B6: 9% of the DV
  • Manganese: 26% of the DV
  • Calcium: 9% of the DV
  • Copper: 10% of the DV
  • Potassium: 9% of the DV
  • Magnesium: 6% of the DV
    Don't forget about the 3% (or more) of the DV for vitamin B1 (thiamin), vitamin B2 (riboflavin), vitamin B3 (niacin), iron and phosphorus.**
  • Total calories: 33
  • Carbs: 6 grams of carbs (2 grams fiber)
  • Protein: 3 grams

That's a whole lot of reasons to feel good about eating this super green, don't you agree?

But what if I don't like the taste of it?

That's why we're going to season it and crisp it up!

There are a lot of ways to eat kale and granted-- raw, massaged kale or gently steamed kale seems to be the winning bet in terms of getting the most out of it but if you want to enjoy it and incorporate it more into your daily life let's start by making it as delicious as possible (in as many ways as possible!)

So let's make it!


What You Need:


  • a bunch of kale
    (You can use whatever variety you like, I like lacinato kale because the leaves are flat opposed to curly.

  • spice of your choice
    (I mix mine up all of the time but if I had to choose my favorite, it would be garlic and paprika!)

  • oil of your choice
    (I use organic extra virgin olive oil)

  • a big mixing bowl
    (I use a big, stainless steel bowl and avoid using plastics)


What To Do:


  • Preheat oven to 350'C

  • Clean the kale and spin it dry

  • Cut the bottom stems off

  • Cut the kale into whatever size pieces you want
    (I usually cut a piece of kale into 3)

  • In the big bowl, pour in some oil and spice
    (Start with about 1-2 tbsp oil and about 1 tsp of each spice you're using-- you can add more if you need later!)

  • Add the chopped kale into the bowl and mix everything together, turning the oil/spice over onto the leaves.

You'll start to see the leaves being coated in the mixture if you keep turning it over and over and you want everything to be as coated as possible so you can add more spice and oil if you feel like it's not spreading.

  • Once you have your kale coated, spread it out evenly on a baking tray or wax paper
    (Make sure the leaves are not overlapping too much or they won't crisp in those areas)

  • Place in the oven and let crisp
    (Time depends on your oven but check on them at about 3 minutes)

  • Flip over once your top side is ready
    (Let the other side bake until crisp)

Serve with any dip you like or eat once cool!

Delicious snack for real foodies - so yummy

I ate these fantastic cabbage chips for the first time a few days ago at my neighbor's house and I was really thrilled, I will definitely prepare them too, they taste so wonderful. Thanks for the recipe!

These are actually kale chips! I've never tried cabbage chips but I bet they would work similarly :)
