Warning: you may never want to eat anything else for breaky, ever again. This is highly addictive due to deliciousness. Be still my beating heart!

Red pepper, onion and mushroom hash-brown, smoked 'bakon', and pumpkin bread smothered in roasted red pepper hummus? I just won breakfast time.

If you were hungry before, you won't be after you eat this- it is jammed full of protein! AND IT'S HEALTHY! Yuuu-uumm! (You're welcome!) ๐Ÿ˜

I was typing away on a post and a little grumbling in my stomach started to occur. I looked at the clock. Not quite lunch time yet. What was I to do?

I don't usually eat breakfast. I eat my fruits in the morning then I have a lunch sometime after that but not usually do I eat anything breakfasty.

I entered the kitchen with cravings swirling around in my mind. What does one eat for breakfast?

  • Bread (X) (Gluten) Oh wait, I have some gluten free bread in the fridge! Score!
  • Bacon (X) (Animal product)
  • Eggs (X) (Animal product)
  • Cereal and milk (X) (Wheat + Dairy)
  • Yogurt (X) (Dairy)
  • HASHBROWNS!! (YAY!)

Hmmm, that's hard right? Look at those X's! I can't have gluten (wheat) nor dairy/meat products... but those are the typical breakfast foods!

I had to get creative! Lucky I did because That's when this bad boy was born and you're going to love it!

Meet the protein packed, vegan, gluten-free breakfast sandwich of your dreams!

What you need:

(this recipe made 3 full sandwiches and I still had leftovers for 2 more later)

  • 2 slices of bread per sandwich (I used gluten free pumpkin bread - it doesn't taste like pumpkin though!)
  • 1 pack mushrooms (that brown stuff is woodear mushroom if you donโ€™t have them, try your favorite mushroom instead!)
  • 1 package of organic, non GMO tempe (for 'bakon')
  • 1 red bell pepper
  • 1 onion
  • 1-2 potatoes
  • Salt and pepper
  • Cumin (season to taste)

What to do:

  • Peel and cut the potatoes and onions into pieces.
  • Add potato, and onion into a food processor and pulse.

  • Add in chopped pieces of the red bell pepper.
  • Pulse until mixed together but leave bigger chunks of the bell pepper.

  • Simmer cumin and coriander in some coconut oil for a minute or two.

  • Next, add in the mushrooms and let them cook in the seasoning first for a couple of minutes.

  • Add the mixture from the food processor into the skillet with the mushrooms.

  • Let cook for about 10-15 minutes. Keeping an eye on it and stirring.

If you want a crispy version you can bake this (I did the second time and itโ€™s delicious that way too!)

  • Cut tempe into strips and fry (or bake) in coconut oil, liquid smoke and paprika.
  • Flip tempe over and cook until desired crispness.
    I like to turn the heat off and let it finish off from the residual heat of the pan.

  • Start with the bread.

  • Smother with hummus! (Get your protein here!)

  • Add on part of the 'hash brown' mixture!

  • Top with โ€˜bakonโ€™ (Oh look! More protein!)

  • Eat like nobodyโ€™s watching!

I was so WOW-ed with how delicious it was. I mean, I know myself and I knew it would be good but holy shmokes it was seriously so good I ate another one just for good measure!

I hope you get a chance to give it a try this weekend! Feel free to tweak the ingredients if you want to use a regular bread or hummus or mushroom- I am positive itโ€™ll still be delicious!

Oh my! My mouth is literally salivating. Such a wonderful creation. Pumpkin bread? Can I make that? I've eliminated pork from my diet, and lots of other nasty things. And I'm reducing all other animal products... goal is to be free by summer. Your post was motivating. Blessings.

So with the pumpkin bread, there's a story. There's a lady here who is making it at an organic plant based restaurant about 45 minutes from my house so I just found it about a month ago. Ever since I have been going to get some loaves every week but I live in Bali so sometimes ingredients can get mistranslated.

I have no doubt that it's vegan and gluten free as well but I don't know what they do to make it. I just bought an oven and am hell bent on making some so I will let you know when I crack the code :)

Also, congratulations for making those steps for your health, I've got lots of tasty recipes that have no animal products within them so maybe they'll inspire you along the way ;)

I've come to a point in my life where I just cannot abide cruelty, either to each other or to our animal friends/spirits. Indeed, I may have taken it too far... I drop kitchen left-overs out in the field each night for a visiting coyote who now comes by each very early morning. In fact I was lucky enough to spot her out there just before sunrise today munching on a road-kill rabbit I found and dropped off for her. My heart is so different than it once was what seems like ages ago, when I was so full of anger and blood lust. But that's another story. Thanks for volunteering to help me through this food transition. Keep posting pics like those above and I'll make the transition even sooner! Blessed be you and yours today.

This is such a sweet message to wake up to @mistermercury :) taking it too far- no kindness is too far in my eyes. Where I grew up, they see coyotes as wild beasts and they hunt them for sport. It's sickening to me. My best friend since I was 6 months old (when she was born) married a hunter and it destroyed our relationship because it horrified me how they paraded the dead bodies around as trophies... oh dear, didn't mean to spiral down that way,

My point was (and is) I really value this kindness a lot more knowing that many mistreat coyotes due to their wildness.

Keep on sharing the love my friend. I really am happy we crossed eachother's paths :)

Awww, well if 'they' think you're off your rocker, that means you're doing something right in my opinion :) I would be rich if I had $1 for every time people back home called me crazy for some of the things I do and I don't even have the opportunity to feed a coyote, but if it makes you feel better, I promise you I would too :)

Bacon. A distinct weakness for me, I'll try your style. Another item on the list I need from town. If they have it.

So, I did some research. Bali is just about exactly 1/2 the size of Yuma County. With 20x the population. No wonder some stuff is easier for you to get :) I hope to get to town today, it seems the NCAA basketball tournament has captured me again. For about the 50th year in a row...

I'm not ready to be a Vegan, or even remotely close. I am certainly ready to be more plant based and I really thank you for these recipes. They are darn near as good as your travel adventures.

Bacon was a big one for me too. I loved it on everything. I even put it on KD which I ate religiously in university.

Oh my goodness, stuff is definitely not easier for me to get lol you are deceived! I have to do a visa run every 30-60 days which means flying out of the country to the closest big city which for me is Kuala Lumpur in Malaysia... it is there that all the fun ingredients come from! Except tempe which one of my farmers here makes for me :)

I also LIVE for the day any one comes visiting from the states and trade free rent for bags of goodies haha :)

I haven't had real bacon in longer than I can remember but I'm quite sure this is better :) Too bad it's soy so you can't have it but like I was saying to Lena, coconut meat or eggplant would work instead!

Honestly, I learned everything I know really fast and completely on my own. I watched my parents when I was younger but was never really allowed to help so it's only recently that I've taken a passion in food that actually came from changing my diet! Point is, I know you can do it, it's easy and just takes practice :)
