Simple But Different Lunch Idea - Pasta Garofalo With Asparagus And Pistachio Pesto
For those of you who are familiar with my recipes you know I have to make something just a little bit differently. Well this time I went with asparagus and pistachio pesto. I simply love asparagus for their taste and nutritional value. The Romans considered asparagus to be the food of kings and after eating them one truly feels like one. Bon apetit!
Ingredients:
250 g garofalo pasta
Pesto:
10 asparagus
¼ cup pistachios (without shells)
¼ cups almonds
1 tbsp freshly chopped parsley
3 tbsp olive oil
Pinch salt
Dash pepper
Yield: 2 servings
Preparation:
Heat water in a small bowl and bring to a boil. Slice each asparagus into a few slices and place them in the boiling water. Reduce heat to medium and cook for 10 minutes.
Drain asparagus and place them in the food processor. Add almonds, pistachios, parsley, olive oil, salt and pepper. Process for 2 minutes pulsing and scraping the sides of the food processor a few times.
Heat water in a pot and bring to a boil. Reduce heat to medium and place in pasta. Cook for 10 minutes until tender.
Place pasta on two plates, top with asparagus pesto and serve.
Preparation time: 5 minutes
Cooking time: 20 minutes
