Have you ever met a person that does not like cookies, biscuits or other crunchy sweet deserts. I don´t think I have. The most easy way is to go into a store and buy them, but are they as tasty as the ones you bake at home. Probably not, and if they are than what is needed is just a little bit more of cookie baking skills and I can guarantee that they will taste better than the ones bought in the store. What is good about baking cookies at home is that you can eat them while they are still hot which you can not do with the cookies you buy in the store because they are always cold :). Below is a simple recipe for making chocolate walnut pockets which will simply melt in your mouth so be sure to give them a try.

Ingredients:

2 cups all-purpose wheat flour
1 ¼ cup baking margarine
1 cup dark chocolate
2 tsp vanilla sugar
½ cup walnuts
Confectioneers sugar
Pinch salt

Yield: 18 chocolate walnut pockets

Preparation:

Preheat the oven to 180°C and crush the walnuts.

Sift the flour on the table or in the bowl. Tear the margarine into pieces and place them in the flour. Add vanilla sugar and kneed for 5 – 10 minutes until the ingredients are well incorporated.

Roll out the dough 0.5 cm thick. Add flour if needed to prevent the dough from sticking to the table. Cut out 9 cm circles, the amount of dough should be for 17 circles.

Break down the chocolate into pieces and melt them in a small pot over low heat. Stir and scrape the bottom of the pot continuously to prevent chocolate from sticking to the bottom.

Place the parchment paper on the baking tray and place the dough circles on the parchment paper. Drop a teaspoon of melted chocolate and 1 teaspoon of crushed walnuts in the middle of each circle. Fold each circle and press the edges together with the fork.

Bake in the oven for 15 minutes until light brown.

Sprinkle with confectioneers sugar.
