Baking Cookies Makes A Home Feel Like Home - Chocolate Cookies With Cashew And Spelt

Although there is a good time to make cookies all year around, there is no better time to make cookies than in the winter time. When I was making this cookies today the sent of cookies spread around my home and it just made a home feel like home. The warmth from the stove and the anticipation when they will finally be baked just brings pleasant feeling to the heart.

And finally they were baked. I just had to have a few while they were still warm and they taste great.

Ingredients:

1 cup cashew nuts
¾ cup baking margarine
3 tbsp cocoa powder
3 tbsp sugar
1 cup dark chocolate
1 ½ cup spelt flour
2 tsp vanilla sugar
2 tsp baking powder
¼ cup water
Pinch salt

Yield: 24 cookies

Preparation:

Preheat the oven to 180°C and crush the cashew nuts.

Beat margarine, sugar, vanilla sugar in a bowl.

Mix spelt flour, salt, crushed cashew nuts, baking powder, cocoa powder and in a separate bowl and stir the mixture well.

Mix both mixtures together, add ¼ cup of water and beat with electric beater until all the ingredients are well incorporated.

Place the parchment paper on the baking tray. For each cookie drop a tablespoon of dough onto parchment paper a few centimeters apart and flatten them with spoon.

With fingers create a dent 2 cm wide and 0.5 cm deep into each cookie, making sure you do not create a hole all the way through the dough of the cookie.

Bake the cookies in the oven for 25 minutes.

While the cookies are baking melt the chocolate by placing pieces of chocolate into a small pot and heating it up over low heat. Stir and scrape the chocolate from the bottom continouslly while it is melting to prevent it from sticking to the pot and burning.

When the cookies are finished drop a teaspoon of melted chocolate into dent of each cookie.

Preparation time: 20 minutes
Baking time: 25 minutes
