Mediterranean Semolina Cake ( Revani) Recipe

In middle east we call it Basboussa and in Turkish and greek they called it Revani. This easy and delicious Mediterranean semolina cake in syrup is deserve to give it a try and it's so easy to make just add all the ingredients and you have a ready cake mixture without conditions. It is perfect for celebrations times as christmas and easter holiday. Follow my steps and thank me later :)

Mediterranean Revani Semolina Cake Recipe

Yield: 6 persons
Prep time: 15 mins
Baking time: 35 mins

Ingredients:

For cake:
2 eggs
1/2 cup sugar
1 tsp rose water or vanilla extract
1 Cup medium grains semolina
1/2 cup shredded coconut
1/2 cup vegetable oil, i use sunflower oil
1 tbsp baking powder
125g yogurt

For syrup:
1 1/2 cups sugar
1 1/2 cup water
1 tbsp lemon juice
1 tbsp rose water (optional)

For decoration:
Pistachio slices
shredded coconut
Raspberries

The way:

  • Preheat oven 180° C.
  • Prepare the syrup: in a saucepan add water and sugar, bring it to boil. When it boil add lemon juice let it boil for 1 minutes add rose water and remove from heat. Cool down at room temperature.
  • Mix eggs with sugar and vanilla until white in color, then add yogurt, shredded coconut, baking powder, semolina and oil. Mix all together until all well combined.
  • Grease10 X 7 inch pyrex oven dish. Pour cake mixture into oven dish.
  • Bake in preheated oven 180°C for 35 minutes.
  • Let it cool for 5 minutes on a wire rack, cut into squares then drizzle the cold syrup all over the semolina cake. Let the cake absorb the syrup and cool down.
  • Decorate with shredded coconut, pistachio & raspberries.
    Enjoy!
