Recreating Recipes From The Internet #2 - Yummly.com @THEGIRLWHOATEEVERYTHING Moist And Light Carrot Cake - With Alternative To Processed Sugar

Hey Steemians

This cute creation below was created by recreating @THEGIRLWHOATEEVERYTHING (THE GIRL WHO ATE EVERY THING) on Yummly.com with some personal touches from one of our kids that decorated the box, due to it was for a school event which was close to Easter.

Had been panicking and scoring steemit for ideas what to make for the school event all week, decided to recreate a recipe from Steemit, (which you can find Here the night before with a bit of a incited, which meant we couldn't send it to school.

With wanting to deliver two recipes one wasn't a worry a classic carrot cake done this a few times, till I realized I had put my recipe somewhere that I could remember where

Panic sets in...

The other one I was wanting a Vegan recipe as the school sent out could we please have some baked goods that were either processed sugar free, Vegan or Dairy Free, this was the one I spent all week scouring Steemit (there was so many delights to choose from) trying to find something that looked spectacular that would draw in the kids, that was quick and easy to make, and had ingredients that were in the cupboard. (This proved a challenge to fit the list.)

On the morning decided to look for a Vegan Carrot Cake, settled on a Vegan Raw Carrot Cake, which will post later, after making that and less than three hours to go to deliver the finished product finally a moist carrot cake recipe with things that was on hand in the cupboard.

With not even a second to spare this was whipped up just in time and delivered, it turnt out amazing (If I do say so myself.)
Cut the cake into two, this piece was slightly bigger than the other piece which was left for the kids to try when they got home.

Lets get down to the process of this cake...

Final product was very light which didn't expect as haven't made a carrot cake this light and moist before, it just melted in your mouth.

Alternative Recipe To Processed Sugar

With the kids devouring the piece that was left for them within 10 minutes of walking in the door, they spotted the leftover cream cheese icing and thought it would be good if another cake was made.
With having one and a half cups of dates left over from the Vegan Raw Carrot Cake, I decided to of set the Processed Sugar in the Cream cheese icing by making a Processed sugar free Carrot Cake this time round, forgot to add the walnuts in this batch.
Instead of the sugar it was replace with one and a half soaked blended up dates.

Tip
When using dates as a alternative or in bliss or raw balls soak them, I use hot water for a few minutes (this may take out the nutrients also, but it makes it softer to blend without blowing up your blender, (on to blender four because I didn't work this one out earlier enough.)

When scouring thru Steemit did see a Vegan and process sugar free icing, (just didn't have some of the ingredients to make it and 4 hours to soak nuts by @heart-to-heart, (which did recreate one of her Vegan Lasagna's the night before baking the cakes, post still to come.)

Wasn't as pretty as the first one, it was quite heavy with the dates in it, not light like the first cake with the Processed sugar, but this one did full you up more which meant you ate less.
This recipe was really easy to follow and very quite to make, the longest time was cooling the cake down (that may of been as I was in a rush.) Really liked that there was an unusual ingredient in the recipe that I hadn't used before when making carrot cake, it worked really well with the recipe. I think this may be the kids go to recipe for school baking... For the original recipe posted by @THE GIRL WHO ATE EVERYTHING on the Yummly.com platform, (unfortently when I typed in the link I had written down for the recipe on yummly it said it didn't exist, was able to find it on the bloggers
