Kitchen Happenings: Kefir Ranch, Homemade Potato Chips & Sourdough Hamburger/Dinner Rolls

Over the last week I have been busy puttering in the Golden D Kitchen; creating some delicious foods and experimenting with some recipes.

Last week I made sourdough starter bread and have been using it to make some different breads; including focaccia bread and this week I made some hamburger and dinner rolls.


Sourdough Hamburger & Dinner Rolls

Recipe


  • 1-cup sourdough starter
  • 1 1/2-cups warm water
  • 1 tbls salt
  • 2 tbls brown sugar
  • 2 tbls olive oil
  • 3-4 cups flour (I used 3 cups regular flour and about 1/2-cup whole wheat flour)

Knead dough and cover in greased bowl until doubles in size. Divide dough into section (I got an even dozen) and place on a parchment paper lined baking sheet. Bake 20 minutes at 375-degrees.

Kefir Ranch Salad Dressing


I don't quite remember who I first heard about kefir milk from, but whomever it was... THANK YOU! I have been loving making new recipes (cheese, cream cheese, yogurt breakfast cups) and NOW... homemade ranch salad dressing!

Recipe


  • 1 1/2-cups kefir milk
  • 1 clove garlic (finely minced)
  • 1 tbls dill
  • 1 tbls parsley
  • 1 tbls chives
  • 2 tbls lemon juice
  • 1/2-3/4 tsp salt
  • 1/2-3/4 tsp black pepper

Place all ingredients in glass jar and shake to mix. Refrigerate.


Homemade Potato Chips


The other night for dinner hubby wanted some homemade French Fries, but I didn't have the correct potatoes. All we had on hand were red-skinned ones; so I decided to make up some homemade potato chips. We haven't had them in forever and I've been wanting to try some malted vinegar to dip them in.

Recipe


  • four large red potatoes (washed and scrubbed)
  • bowl of cold water and salt

Slice potatoes to desired thickness and place in bowl of cold water. Add about 1/4 tsp of salt and let sit in water for a minimum of 30 minutes. I left mine soaking for about an hour and a half.

Heat deep frying oil to 365-degrees and place small amounts of prepared potatoes into oil. It will take about 5-7 minutes to fry up to a crispiness that will not succumb to sogginess; depending on the thickness of potatoes frying time may vary.

Sprinkle with preferred seasoning while warm and serve.

Love the Homemade Potatoes but don't have a deep fryer. Question, why do you soak in salt cold water. I sometime make these and just put some oil in the bottom of my cast Iron. Love the sourdough rolls they look great.

I soak in the salt water to help keep them from turned colors and to add salt to the potatoes instead of sprinkling on after. Keeping sodium intake down so this helps.

I've never tried homemade potato chips. They look yummy. I'm gonna have to try it.

My wife and I just got an air fryer. I was super skeptical at first, but now I think they are pretty amazing. I know it isn't really lower tech homesteading type stuff, but the health benefits are solid. Your chips look way better than my first try at them did though :) How were they with the malt vinegar? I am a big fan of that stuff. -@bozz

The malt vinegar was REAL good! My youngest daughter has an air-fryer and loves it. She'd rather use that then anything- but she says the clean up can be a chore in itself.

Definitely making those burger rolls this summer.

I toasted them up on the griddle and we had venison burgers! They are so hearty and held up to the burger meat better than store bought buns.

They will love them. So much healthier than the store bought ones filled with preservative and such.

The sourdough rolls look simple enough to whip up ~ will definately give them a whirl. And I could munch the potato chips right now thanks.
