Love the Homemade Potatoes but don't have a deep fryer. Question, why do you soak in salt cold water. I sometime make these and just put some oil in the bottom of my cast Iron. Love the sourdough rolls they look great.

I soak in the salt water to help keep them from turned colors and to add salt to the potatoes instead of sprinkling on after. Keeping sodium intake down so this helps.
