Cooking for beginners series #6: Simple coconut curry chicken with Jasmin-Rice and pineapple. incl. 2k Video, Check it out !

In this simple and delicious post, i will show you, how a simple and tasty  it could be. Curry and mostly any other Asian food are my personal favorite meals! 



Ingredients  (3-4 servings):

  • one small pineapple, (or a can of pineapple)
  • one small onion
  • two cups of Jasmin-rice (dry)
  • pinch of salt and pepper
  • one tablespoon of curry powder or paste
  • one red pepper
  • optional basil or Thai-basil
  • one can of coconut creme (400 ml)
  • about 300 g of chicken breast filet or turkey filet
  • one tablespoon of Maizena (corn starch)
  • 3 tablespoons of oil (coconut, olive, peanut) just take what you have got at home

Which tools and materials do you need?

  • a knife and a cutting board
  • two pans or pots (if you have got a steamer, you only may need one pot/pan)
  • cooking spoon or something similar
  • hotplate
  • optional a steamer (for the rice)

Preparation:

You should start with preparing your  ingredients by washing and cutting them. For a detailed explanation, check out the video at the end of this post!

Now, heat up a pan or a pot,  add 3 tablesoons  of oil and gently fry the : onions,, pepper, pineapple like i did. Don't forget to stir continuously!

After this step, also add the coconut cream/milk, curry powder/paste, salt and pepper

Boil the curry for about 5 minutes under occasionally stiring. Then add the cut meat and stir again while the curry boils.

Now it's done, enjoy your tasty spicy meal!
