Hey steemians, today i want to begin my "Cooking for beginner series"! If you missed my Introduction, feel free to check it out at: introduction of martin.the.chef

In this series, i will show you how simple, fast and cheap cooking can be. Let's start!

#1 mushroom sauce with creme

Ingredients for 2 servings:

  • 1 x onion
  • 100 g mushrooms, use what you can find in your super market, like champignons, oyster mushrooms, shiitake, chanterelles, porcini, just take what you like most
  • 50 ml of fresh creme/1,7 fl oz
  • pinch of salt and pepper
  • preferably fresh herbs like, parsley, majoram, thyme, it doesn't matter that hard, just take what you have got at home, dry herbs are also a possibility
  • optional: 1 small piece of chopped garlic
  • optional: 2 shots of white wine
  • 2 soup ladles full of brown sauce (meat-stock based sauce), or demi-glace sauce or something similar
  • 2-3 tablespoons of olive oil extra virgin or native

What tools do you need?:

  • pot or pan
  • cooking spoon or something similar to stir
  • a hotplate of course :)
  • a scale or a beaker

Now it's time for preparation:

Start with the mushrooms and the onions, chop the onions and cut the mushrooms in four parts (if you like them smaller, it's totally fine, take a look:

Heat up the pot and add the olive oil, immediately add the chopped onions and fry them lightly:

Add your cut mushrooms, fry and stir them like the onions, give them medium heat and some colour, after that you may add your (optional) garlic and white wine too.

Now pour in the brown sauce, and give it full power! Don't forget to stir, nothing should stick at  the bottom of the pot, otherwise turn down the power of your hotplate and try it a bit slower. Also put in the herbs you've selected before. After boiling it for about three minutes, add the creme, stir it again, and boil all together for another 5-7 Minutes, until the mushrooms are soft, if your sauce gets to thick/dry, just add a little bit of water, only how much it needs to give you a nice consistency.

This sauce perfectly goes with a grilled chicken breast, but you may serve it with beef, pork or veal too!
