Cooking for beginners series #2: vegetable phat thai, sweet 'n' sour style

Hi to you steemians, today i want to share my newest creation. This dish was sold 30 times on the first day!  I think this may  be the new best seller at our restaurant :)

It's even totally vegan! But if you like to add a few slices of chicken or beef, do it, cooking is creative and fun.


Ingredients of sweet 'n' sour sauce (1-2 servings):

  • 1 x tablespoon of brown sugar
  • 1 x tablespoon of vinegar
  • 1 x small piece of garlic, chopped
  • 1 x small piece of ginger, chopped or paste
  • 2 x tablespoon of sweet chili sauce 
  • 2 tablespoon of soy sauce or teriyaki sauce
  • 250 ml of pineapple juice (100%)
  • 1 tablespoon of Maizena (cornstarch) and some water


Ingredients of  vegetable phat thai (1-2 servings):

  • 150 grams (dry weight) of rice noodles
  • 150 grams of vegetables like: onions, mushrooms, peppers, bean sprouts, carrots, zucchini, leek, cabbage, chard, just take what you may like most!
  • 1-2 tablespoons of peanut-oil or just any other oil that is capable of frying
  • as i mentioned above, you can tune this recipe and add a few meat slices, i suggest you to try beef and/or chicken, yeah that's right, they can be combined if you wish that:)
  • 20 grams of cashews/peanuts/pine nuts


What tools do you need?:

  • one pan and one pot
  • hotplate :)
  • scale
  • spoon
  • knife 
  • cutting board


Preparation:

You should start with the sweet 'n' sour sauce, so let's go:


Gently melt the brown sugar to caramelize it (you should use medium heat on your hotplate)


Now it is time to pour in your pineapple juice

Full power! Boil it to reduce it down to about 50% 

While boiling, add the vinegar, ginger, garlic, sweet chili sauce and the soy sauce

Meanwhile soak the rice-noodles in warm water for about ten minutes, or boil them for two to three minutes.

after that, take a cup or something similar, add one tablespoon of Maizena and two tablespoons of water in it, and stir it:

Afterwards, add the Maizena-water mix , but be careful, don't add to much of it and the sauce has to boil when you do this, check it out:

A consistency like this would be perfect! Turn of your hotplate and begin with the phat thai.

Heat up a pan and put the oil in.

I used that tasty looking vegetables:

fry it like i did!

Add the soaked rice-noodles and fry them a little bit too, don't forget to stir.

pour in the sweet 'n' sour sauce and add the nuts

DONE! Enjoy this tasty meal, don't forget, be creative, try different stuff, cooking is fun.
