Cooking for beginners series #5: Original Austrian Kaiserschmarrn (sugared, shredded pancake). Check it out !

This simple and sweet dish is an Austrian classic. I will show you, how simple and tasty this meal can be cooked !

Ingredients: 

  • 100 g of cake flour
  • 250 ml of fresh milk
  • 3 pieces of whole egg
  • pinch of salt
  • some powdered sugar
  • apple puree/apple sauce
  • slice of unsalted buttre 
  • optional: a shot rum and a few raisins 

What tools and materials do you need:

  • hotplate
  • pan (if possible, use an iron pan, it's way better for this meal)
  • two cooking spoons
  • a lid, that fits on top of the pan
  • a beaker or a scale
  • eggbeater or something similar


Let's start with the preparation:

You're starting by measuring the cake flour,  put it in a medium sized bowl like this

Now, it's time to add 250 ml of fresh milk into the bowl

Add a pinch of salt (and the optional raisins), take the eggbeater and whisk or stir the mixture with it.

Add the three whole eggs to it,  and stir again, but not to much. The eggs should be still visible (about 20 %) in the mixture

After the mixture is ready, heat up an iron pan on medium heat, i used power level 6 of 10 of my hotplate, wait 2-3 minutes. Put a slice of unsalted buttre in it. But it shouldn't burn, keep that in mind, it should only melt! Immediately after the buttre is melted, add the prepared mixture into the hot pan. Reduce the heat of your hotplate to about 4/10, (depends on your equipment). You have to figure this out on your on, just try it :)

Now, put the lid on the pan, and wait 3-5 minutes.  After that, open the lid and turn around the Kaiserschmarrn (pancake). Repeat the same procedure for this side of it. That means: close the lid and wait again :)

Almost finished, you just have to shred/smash the pancake. I cut it into four pieces and started shredding it! When you're done, stir the Kaiserschmarrn for about one or two minutes and then it's time to add the optional shot of rum :).

Take a plate and serve this tasty meal with three tablespoons full of apple puree/apple sauce. Don't forget to sugar it with powdered sugar.
