For the most part gluten free baking has been pretty disappointing...until I saw this mix at the local Soriana Supermarket. I'd heard of similar blends by other brands so we gave it a try and it's the best blend Bob's Red Mill Sells as far as gluten free is concerned. Pancakes are the ultimate test....and it passed.

I've even joked that they get rid of their other gluten free blends (because they suck) and just stick with this one.

Ingredients

1 c Bob's Red Mill One for One Gluten Free Blend
1 egg
1/2 t vanilla
3/4 c milk
1 T baking powder
1 t apple cider vinegar
1 T butter, melted

It's the only gluten free blend I've worked with that's come even close in texture to regular flour.

Combine everything in a two cup glass measuring cup.....

Cook on medium low in a buttered pan just like regular pancakes.

Look at how fluffy those are!
