Today we will continue in the Christmas wave and prepare another entry for these holidays, in this case a rich vegan appetizer Mounted eggplant with romesco sauce, which will fall very well as an entry into a Christmas dinner or any meeting at the end of the year, let's see what it is.

My secrets INGREDIENTS

♡ 2 large aubergines

♡ 1 cup flour

♡ 200 ml. of very cold water (approx.)

♡ 10 dry ñoras

♡ 1 ripe tomato

♡ 1 clove of garlic

♡ 10 toasted almonds

♡ 10 toasted hazelnuts

♡ 1 tablespoon of oil

♡ 1 tbsp. vinegar

♡ Breadcrumbs or toast

♡ Salt

Cooking time: 15min

Total: 30 min

Wrap the tomato and the garlic cloves (peeled) with silver paper and roast them for 15-20 minutes at 200º. Open the ñoras to remove the seeds dry and, once cleaned, soak them in hot water for about 15 minutes or until the meat of the ñora is easily detached by scratching with a knife.

Cut the aubergines into thin slices, salt them on both sides and set them aside in a colander. In this way, water will be released and they will be tastier.

Prepare the romesco sauce crushing the tomato, garlic, ñora meat, almonds, hazelnuts, oil, vinegar and a bit of toasted bread or bread crumbs. Grind until the emulsion is obtained. If the sauce is very liquid, add another little bit of bread and crush until it thickens.

Heat oil in the frying pan to coat the aubergines. It is very important that the mixture of flour and water is prepared just at the time of batter, because for the tempura to come out crisp it is essential that the oil is very hot and the water we have mixed with the flour is very cold.

I have never heard or tried the aubergines before and I don't really know if I can find them here in El Salvador.
