My dear foodies,

For today I have brought a classic Spanish recipe in its vegan version, it is a delicious tortilla of potatoes, many will say how it is possible to make a tortilla without eggs, and although the dish is easy to prepare, you will always have to know some tricks to fit you perfectly, we will see how we engineer the traditional cuisine to adapt it to the public who has decided to tell God to meat or byproducts that come from it.

Tortillas are perfect to eat as an aperitif or to eat with a salad or accompanied with rice at home for dinner or lunch.

The ingredients that will undoubtedly make us give consistency and abandon the idea of using eggs are chickpea flour, yucca starch and of course a little beer. Now let's move on to how to prepare this delicious Spanish dish in a vegan style.

VEGAN POTATO TORTILLA

My secrets INGREDIENTS

♡ 100 g chickpea flour

♡ 175 ml of beer

♡ 75 ml water

♡ 20 g cassava starch

♡ 4 potatoes

♡ 1 onion

♡ Olive oil for frying

♡ Salt

PREPARATION

Preparation time: 25min

Cooking time: 25min

Total: 50min

Peel and cut the potatoes into thin slices and reserve.

Heat a frying pan with oil. When the oil is hot, fry the potatoes. You can do this step in batches if the frying pan is small.

While frying the potato, peel the onion, cut it in half and then in julienne (strips).

When you have fried the potato, fry the onion.

Place the potato and fried onion in a strainer to release excess oil, add salt and mix.

In a blender glass, add the chickpea flour, cassava starch, a salt wedge, water, and beer. Beat until ingredients are well mixed.

In a bowl, pour the mixture over the potatoes and onion and stir lightly with a fork.

Heat the frying pan where you will make the tortilla. When it is hot, paint with a little oil (including the edges).

Add to the frying pan the tortilla mixture you have in the bowl and chafe a little so that it is well distributed. Raise the heat for one minute so that the base is roasted. Then lower the heat and let the tortilla cook covered for 5 minutes. After that time, turn the tortilla over, raise the heat for one and a half minutes and let it cook covered over low heat for 3-5 minutes more.

When it is done, take the tortilla out of the frying pan and serve immediately.
