FlaminGirl's recipes! #43 - Vegan Rice Pudding 🍚
In this delivery of green food I bring the classic of all time the rice pudding but in its vegan version, how to miss this traditional dish part of the universal cuisine, if you are intolerant to lactose and gluten this is the recipe for you to taste and not miss its ancestral flavor. The original recipe is with milk and sugar but in our case we will not use any product of animal origin. Come on, accompany me to prepare this delicious recipe.
Vegan Rice Pudding
My secrets INGREDIENTS
♡ 1 litre of oatmeal drink (no added flavour or sugar)
♡ 200 gr. round rice
♡ 100 gr. of sugar
♡ ½ lemon skin
♡ 1 cinnamon stick
♡ 1 vanilla pod
PREPARATION
Cooking time: 50min
Total: 65min
We clean the rice to remove the starch. We will wash it under the faucet until the water comes out clear.
Pour the oat drink into a saucepan, add the rice, the cinnamon stick, the lemon peel and the vanilla pod open. Let it cook on a low-medium heat for about 40-45 minutes.
After this time, if we see that the rice already begins to present a mellow texture, add the sugar (otherwise, we will let the rice cook a little more) and let the fire 10 minutes more, or the necessary time until it reduces almost all the liquid that remains.
When the vegan rice pudding is ready. Remove the cinnamon stick, lemon peel and vanilla pod. Serve hot or cold with a little powdered cinnamon.
NOTES
If you are celiac, you can replace the oatmeal drink with rice drink. In this case, reduce the amount of sugar in the recipe to 90 grams if you don't want a dessert that is too cloying, as the rice drink is sweeter than the oat drink.

Helps control blood glucose levels, thanks to B1 cinnamtannin. This compound stimulates insulin receptors, also inhibits an enzyme that inactivates them, increasing the ability of cells to assimilate glucose. To do this, it is recommended to consume cinnamon on an empty stomach and after eating.
They favour good digestion, as they contain important quantities of dietary fibre, iron and calcium. This makes it possible to eliminate bile salts from the body; by not eliminating them correctly, it can harm the colon. Due to its spicy taste, it also activates the digestive fire of the stomach.

It helps eliminate accumulations of fat, reduce the presence of cholesterol and triglycerides; likewise, it helps prevent heart disease. Regular cinnamon infusion prevents the accumulation of fat, especially in the abdomen - the most harmful form that exists.
It can also be used as an antidiarrheal and natural antiemetic - in other words, it controls vomiting and nausea. Caution should be taken when using it to control these conditions during pregnancy, as cinnamon is so strong that it could be abortive when consumed in large quantities. Better to avoid it in pregnancy or suspicion of it.

Two tablespoons of oats provide 2.9 grams of fiber (12% of the suggested daily value). It is recommended to eat 25 grams of fiber per day.

Because of its significant amounts of fiber, it slows the digestion and absorption of ingested carbohydrates, and avoids blood sugar spikes after meals.
