Gifts from my Heart, Gifts from my Kitchen #6 - Magical Shortbread Cookies

This will be our last baking session for Gifts from my Heart, Gifts from my Kitchen, magical Shortbread Cookies done many ways; deliciously crunchy and a welcome gift for family or friends!
I had to hide it from myself or there'd be none left to make up into gifts for the Christmas tree ;)

When I was a little girl I would stand on the kitchen chair and ask my Granny for the Decipe, I could not even read at that stage, but Gran said I would look at that recipe and ask for the usual ingredients; flour, sugar, butter, eggs and milk.
So you can gather that I've always loved baking!

The recipe I'm sharing with you today is one that I often made when my sons were growing up, one batch dough with only three ingredients - Butter, Self-raising Flour & Icing Sugar (Confectioner's Sugar) but can be magically turned into many different variations with simple additions.

The dough gets rolled into long sausage shapes and rolled in anything from Sprinkles, Coconut, Sesame Seeds, Crushed Nuts, Choc vermicelli or anything else your heart desires:) These rolls are placed in the refrigerator to harden, taken out, sliced and popped into the oven for a magical batch of instant homemade cookies!

Basic Recipe

  • 1,5 kg Self-raising flour
  • 1 kg Butter softened
  • 500 gram Icing Sugar
    Sift dry ingredients together and mix in food mixer to a smooth dough
    Shape into long sausage shapes & roll in sprinkles, coconut, choc vermicelli, sesame seeds, crushed nuts etc etc

    Reserve a little of the dough and knead in crushed pecan nuts, form little balls, flatten slightly and bake

    Hide choc chips inside some of your nutty cookie dough or top with a glacé cherry

    Cut rolls into biscuits with a sharp knife and place on baking pan
    Sprinkles

    Sesame Seed

    Bake in 160C fan (170C regular) oven till straw coloured

Jeeze Lizelle. You have just completely outdone yourself with this whole series and these are no exception.

My mother made these when I was younger. Mostly she just made them plain and we ate them by the gallon. Sooooo goood.

Thank you for your lovely comments @ birdsinparadise! Some are coffee bottles, it takes a little while to get the coffee flavour out, but really worthwhile as one can use it for storing anything else afterwards!

Oh my, those look so delicious!! I love those simple butter cookies. I sometimes add peanut butter instead of some part of butter and they come out so good too :)

Looks great and I must say my girls are baking cookies on Saturday so they will get a look at this post before then. Maybe I will end up with some Lizelle cookies this holiday season thanks this post.

Shortie just checked it out and said " no problem" I just need to pick up the sprinkles and do the metric conversions, we already have pecans from our tree too. I may make her do the metric though, good math lesson but she doesn't that is coming.

Oh that's great Mr Papper, just please tell Shortie to use a very thin knife when cutting the cookies and to enjoy! Do you use pounds and ounces then?

Yes, we are pounds and ounces and Fahrenheit degrees. I will tell her about the thin knife, thanks for that tip.

This recipe is so simple I'd imagine you could just do it by percentages / ratios. 3 parts flour / 2 parts butter / 1 part powdered sugar ... and make it in any size batch you want. (1 1/2 c flour, 1 c butter 1/2 c powdered sugar as the base.) Doesn't that about say it, @lizelle?
