After three weeks on the road, the Crowbar Crew is back! Lot's of catching up to do on the homestead and of course Father's Day! @guntotnhippie wants cake but Crowbarmama hasn't gone grocery shopping to replenish the supplies. Will she be able to whip something up? Will there be cake? Will there be chaos and shenanigans? You'll have to watch to find out!

2 cups Whole Wheat Flour
2 cups Cane Sugar
2 Sticks of Unsalted Butter
5 Large Eggs
1 teaspoon Vanilla Extract
1 teaspoon Sea Salt

As usual, I tweaked the recipe, cutting the sugar to 1.5 cups and increasing the salt to 1.25 tsp and also using salted butter rather than unsalted. The next time I make this cake I will cut the sugar down to 1 cup. It was still pretty sweet for us.

I was lucky to find leftover frosting in the freezer. One was a gluten free cooked frosting, the other was a vegan chocolate ganache. Both recipes can be found in this old post.

It was a busy day on the homestead. No time for anything fancy, but that doesn't mean we sacrifice taste!

I also made sure to have a treat for Wildstyle, my child with the allergies. I cheated a little bit with a storebought allergy-friendly cheesecake which we also topped with a bit of the chocolate ganache.

I chose @Crowbarmama as a handle because I believe in doing the best you can with what you have on hand. The crowbar is a multi-purpose tool. You’ll notice my photography is a bit rough, my grammar is not the most polished, but as a homeschooling, homesteading mama of 4, if I waited to take my photos until the light was perfect or re-edited my posts a 5th time ( I shoot for 3 drafts), I would never get a post out!

Don’t sweat the small stuff, just Crowbar it!

Sometimes when I cut the sugar too much my baked goods get crumbly. Have
you had a similar issue?

I hadn’t thought about freezing frosting! I usually put it in the fridge and then after a kid or three sticks their fingers in it too much it ends up in the trash...

As for the sugar, I rarely bake with regular flours, between the allergies and trying to sneak more nutrients in (veggies or sprouted grains)the texture of my baked goods is usually on the dense or crumbly side. My husband did say this cake's texture reminded him of cornbread, but I think that was due to the whole wheat flour.

As for frosting, if it's a small amount it goes in the fridge and is eaten by the spoonful! 😉 When there's enough to frost a small cake, then I freeze it.

That looked great. I liked the camera angle too , I know how tricky it can be too demonstrate things from one angle, I struggle with that in the workshop. That cheesecake looked good to and Newyork baked is my favorite. Haha your husband and little one getting in on it all there.

The camera angle was out of necessity! It was the only clean corner of the house! 🤣🤣🤣
Actually I got this cool little contraption that has a spring loaded clip ( Like a really strong clothespin??) and so I attached it to my kitchen shelves.

We're all a bit nutty around here! The poor kids get it from both myself and my husband! Lol! There's no chance for them to be normal! 😉

Thank you! Yes, the frozen ganache was perfect. The frozen cooked frosting got a little grainy and funky in the texture, but the taste was perfect and two of the kids opted for it over the decadent ganache, so that tells you something! I'm glad you got some giggles, We are a silly bunch!

Eggs are my favorite! Mmmm.... But I have one daughter who is allergic to them, so for many baked goods I omit them.

I've ran into several people here that have a hard time wrapping their head around the idea of having to do a lot of meals myself. (gluten allergy and have to avoid corn syrup, high fructose corn syrup, dyes and artificial flavors) So it prevents us just being to run out and grab dinner or lunch majority of the time. I'm hoping that one day we're able to move somewhere that's more open with options at restaurants but until then lol I get to do that for my littles.

Ooh mama, we are in the same boat! My little Wildstyle (that's the handle she's chosen for Steemit) has crazy gut and immine system issues so when her immune system is triggered it send out false positives. One day she can have romaine lettuce, the next day it breaks her out. Her list of offending foods (depending on the day) include dairy (butter seems ok though), eggs, wheat, oats, corn, all dyes & artificial stuff, soy, all nuts except almonds, stone fruits, cherries, strawberries, cabbage (although she tolerates raw sauerkraut), carrots and more. We only go to a handful of places and then I'm still asking a million questions and often getting an eyeroll, but we do the best we can. We've really changed the way the whole family eats as a result and we praise her for having saved us all. My husband gave up soda as a result and cereal is only a once in a while treat, where it used to be a breakfast staple. Much love to you mama. And that makes my heart hurt for her! :( It hurts they can't have "normal" childhood fun carefree but in the same sense.. like you.. my little saved us as well! I've said that many times doing facebook live videos and stuff.

I'm glad you're enjoying them! And trust me, if you're going to frost this cake, you can easily cut that sugar in half. It was a bit too sweet for me even plain with a glass of milk.
