Fruits & Veggies Monday {Soup Swap Party!}

Happy Monday my friends! Coming up this week we have Thanksgiving here in the US, so it is a good time to once again say how thankful I am for all of you! I am so lucky to have made many dear friends, especially my wonderful #fruitsandveggiesmonday family! @lenasveganliving's contest continues to bring endless amounts of joy to my Mondays every week. Thank you Lena for keeping us going and to everyone who joins in for sharing such wonderful food from all over!

My entry this week follows the theme of friendship with a little recap of the party I hosted yesterday. We only had a small crowd since everyone is quite busy getting ready for the holiday this week, but I actually enjoyed it as I got to spend quality time with those who were able to make it. Since many of us end up having to help cook for the big day on Thursday and often end up overeating lots of rich foods, I wanted to do something to start off the week in a healthier manner. Everyone who came brought a pot of soup to share! Then we divvied up the leftovers so that everyone had some to bring home and make it easier by not having to cook until Thanksgiving.

I was really pleased with how much fun it was and how each soup was different. Not everyone made a fully vegan soup, but I will share the ones that were with you all today. Even the ones that weren't gave me some ideas to transform into vegan-friendly versions later on. 😉

First up I made a beet soup in the slow cooker. I knew there was a possibility my sister might come, and another guest has issues with onions so I opted for a version with fennel instead of onions. You all should know by now I love fennel anyway. I also had kohlrabi, carrots, celery and beets from my beloved farmers market to put into the pot. I chopped all those up then put them in the slow cooker with a cup of red lentils, veggie broth, a few bay leaves and this seasoning blend I had a sample of from Penzey's. It had cinnamon, marjoram, garlic, nutmeg and a few other spices. Super easy yet mighty delicious!

My parents came and brought my niece, so my dad made one of the crowd favorites of the afternoon--a chili that he added slightly more liquid to so it was a little more soup-like. I think he used a recipe from The Minimalist Baker and made just a few tweaks to it. I'm happy to have some of that left to eat these next few days. You can never go wrong with sweet potatoes and beans in my opinion!

Another friend made a simple yet classic butternut squash soup. Coincidentally her boyfriend really dislikes that type of squash, so she was happy to have an excuse to make it so she could enjoy it. I actually ended up eating a bowl of it with some avocado toast for breakfast this morning. That might end up being a new cold weather breakfast because it was quite a nice way to start out the day. I think hers was basically onions, squash, broth and some spices.

Though we had plenty of soup to fill our bellies, I couldn't resist making some hummus with the abundance of fennel fronds I had left. I think my chickpeas could have used a little longer in the pot when I cooked them, so my dip ended up a little chunkier than usual. Despite it not being as creamy as I usually like, the flavors did not disappoint. I used chickpeas, tahini, lemon juice, fennel fronds, oregano and a bit of basil. Herbs make everything better!

I will definitely do a party like this again in the future! It was a lot of fun to see what everyone brought, and I think they all enjoyed getting to take home some different options, as well. It's nice to be able to "party" with vegetables taking center stage! 🥕 As a master meal prepper it definitely makes my heart happy to have enjoyed bringing a little element of my usual Sunday meal prep to share with my loved ones! Now I'll have plenty of good fuel to keep me going while I finish up deciding how I'm putting together my Thanksgiving contributions.

Soup really is soul food! A week doesn't go by in the cooler weather when I don't have a big pot going to last us for the week. It's even more fun when you have leftovers to add to the pot!

Haha, you always have a standing open invite if you ever make it to Atlanta. 😜 We always like the pot-luck style of parties, but the soup was definitely a great theme! Though I would be equally excited for chili swap, too. I'm not picky if it gets all happy in a pot and I can eat it out of a bowl.

You should join in on the @cookwithus contest this week! I need to see if they shared the post yet, but they are donating the prizes to charity this week instead of awarding them to entrants. Should be a fun one to see what everyone brings to the table! I'm on deck to share a side dish.

I was just talking to my husband about a similar idea of donation from post payouts… very cool. This week I’m swamped but I have had my eye on the @cookwithus crew so may give it a go one of these days. I’m just so loyal to my Monday and Friday folks that forgoing them to enter another contest is unfathomable. 🤷🏼‍♀️ I might pop in there one of these days though… I’ll be looking for your side dish!

I could definitely go for a visit to Costa Rica! I've not made it there yet, so it is definitely on my humongous list of places I would like to see.

I totally get you about not wanting to sacrifice one competition for another. In a pinch I have hit two at a time, so I know Lena never minds if you use a Monday post to jump in on another contest, too. There are so many cool contests, though, so it is impossible to jump in on them all! I generally use Steempeak now to write my posts and there is an option to change the beneficiary for the post payout. I need to remember to use that option when I make my entry post!

Yeah, we will usually just shoot some steem from our payout to people, you know to say “thanks” for hosting the party, but being able to automatically do it is quite convenient.

I haven’t poked around too much on steam peak. There are so many options out there now. I think when things calm down a bit I’ll be much more present in different groups.

The chili/soup was my favorite, too. My pops knows how to put together a good meal! I think that's the one I'll have for dinner here in a few...😋

Isn't hummus just the best? I think I make it slightly different each time because there are just so many options! I loved the herbs in this one. I have done fennel seeds before, but I think this was my first time using the fronds.

Oh yes, Happy Vegan Thanksgiving to you and your family Katie. So much of delicious food and the soups, wow; I wish I was there, lol. I love to try them all, I just cannot imagine soup without onion, so I would love to try it. You are so creative by substituting it with fennel, I would not though of that. Although, I know that Chinese Buddhism prohibits onion and garlic so the followers use Lily bulbs instead. I tried that and it was very good. I bet your soup was yummy as well 🍒 🍌🍑🌿🍍🍓🍇

I was definitely thinking of you and all the other Monday crew when I was putting the party together! I still love my onions, but it is always nice to have some tricks up my sleeve to keep everyone happy and feeling good. I have come to very much enjoy fennel, as well, so I hope you give some a try in a soup one of these days. That's an interesting tidbit about the Lily bulbs! I knew they didn't do onions, but didn't know what they substituted! I was just telling @barbara-orenya I need to find my Blue Turkey from the contest you hosted last year. Perhaps he can help me with my Thanksgiving preparations this year. ;)

I had a feeling you would enjoy my beety creation! I was really excited to hear that most of my guests were pleasantly surprised at how much they enjoyed it since a few of them wouldn't touch a beet otherwise. I think with all of the other chunky veggies in there the beets were subtle so they didn't overpower the bowl. I am indeed very happy to have soup for leftovers so I can start prepping my contributions for Thursday! What are you cooking up for Thanksgiving Mrs. Bird?

hehe, you knew you would get me with the beets! I'll be trying this one my friend :) I just love your idea with the soup swap, ingenious! We have found living in the tropical climate our appetites have changed...light soups are best. I'll be trying some new ideas..I'll let you know if they work out lol Mr. Bird is a patient and willing taste tester!

Oh I imagine you will cook up some really delicious stuff to keep Mr. Bird's tummy full and happy! It's always fun to see what everyone else interprets for their holiday meal!
