Friday Night Healthy Eats! | Quatro Formaggi Fat Head Pizza!
It’s Friday Night…and that means Pizza at the Bird Nest!
Tonight we’re going for an Italian number, Quatro (meaning 4) Formaggi (meaning cheese) 4 cheese Pizza! Quatro Formaggi is an Italian Lazio style pizza which originated in Rome and is quite popular all over Italy.
Now before you say, "But Bird, pizza isn’t healthy!"
Hang on, have you heard about Fat Head Pizza Crust?
Fat Head pizza crust is amazing! Its grain free, keto and gluten free! It’s also low carb and contains no sugars! And yes, it tastes great. No bloating or stuffed feeling after eating this pizza.
Are you game? Okay then…
Fat Head Delish!
Fat Head Crust
- Almond Flour (3/4 cup)
- Cream Cheese (2 tbsp.)
- Shredded Mozzarella Cheese (1 ½ cup)
- Egg (qty 1)
- Italian Seasoning (1 tsp)
- Salt (dash)
Quatro Formaggi
- Mozzarella Cheese (1/2 cup)
- Blue Cheese (1/4 cup)
- Gruyere Cheese (1/3 cup)
- Fresh Parmesan (2 tbsp.)
- Fresh Garlic (2 clove)
- Extra Virgin Olive Oil (2 tbsp.)
- Thyme (1 tsp)
- Red Onion
- Fresh Olives
It all begins with Cheese…
Mozzarella and Cream cheese specifically! Mix both together in your favorite bowl and microwave for 1 minute. (If you don’t have a microwave you can do this on the stove, low heat and watch it carefully!
Stir it up…
and heat for one more minute. Carefully remove it from the microwave and stir in the remaining ingredients. So cheesy, you’ll be tasted to grab a spoonful!
Grab the baking sheet…
and press the dough evenly on a parchment lined baking sheet. Wet fingers work best for this exercise Now bake this at 425 degrees for 10 minutes or so. The crust should be golden brown.
While the dough is baking…
prep the red onion, mince the garlic and slice the olives. Grab a little bowl and mix the garlic with the Olive oil.
Shred the Gruyere Cheese…
and toss with the Parmesan and Thyme.
The Timer says…
time to assemble! Lightly brush the crust with Garlic Oil, sprinkle the Mozzarella and Blue cheese evenly over the crust. Add the Onion rings and Olives. Top with the Gruyere mixture! Ohhhh my! If you like pepperoni or other toppings feel free to add those before the final cheese topping!
Back to the oven…
for 15-20 minutes. The cheese should be a bit bubbly and golden!

I make a fat head pizza roughly once a week. Often on Friday. I'm still a carnivore so mine usually have meat. Last one was chicken, sweet Italian sausage and bacon. I use double the recipe so can eat 1/4 of the pizza each day for 4 in a row. It stores well and tastes great.
I use 2 pieces of parchment paper. One under, and one on top so I can roll it out with a rolling pin. It really works great. I love how the almond flour 'toasts' it really does make a really good crust.

I just made a savory zucchini garlic bread that turned out delicious. I thought pizza sauce and toppings would be yum on it next time. If I can recreate it I’ll take photos next time too.

I had to look up Fat Head Pizza, too. I never heard of the stuff. Is it really as good as everyone claims? (Good tasting, I mean. You healthy-food types will eat just about anything as long as it meets some other criteria. So I'm making my priorities clear from the start.)
