How to Cook Spicy Indian Chicken Curry | Indian Cooking with Video | Chicken Marination Recipe Included

Hello dear Steemians! Today I would like to share a recipe on how to cook spicy chicken curry in Indian style.

Before beginning the cooking process, I marinated the chicken in various spices and a few other taste enhancing ingredients first.

Marination of chicken

Ingredients:

  • 1 chicken which has been cut into pieces
  • Cloves
  • Star aniseed
  • Cinnamon
  • Cardamom
  • Turmeric powder
  • Jeera (cumin) powder
  • Coriander powder
  • Monosodium glutamate (use moderately)
  • Garam masala
  • Chilli powder
  • Chicken curry powder
  • Black pepper powder
  • Salt to taste
  • Ginger paste
  • Garlic paste
  • Mint leaves
  • Coriander leaves
  • Yoghurt
  • A small amount of oil

Method to marinate chicken:

Place the chicken in a bowl and add all of the ingredients above in the same order. The picture above was snapped halfway while adding the spices.

Mix all of them well using your hands.

Wrap it up with an airtight wrapper and keep it in the refrigerator for a few hours or overnight.

Note: You can skip the mint and coriander leaves if you don't like them in the curry. This method can also be used for chicken biryani marination.

Cooking Spicy Chicken Curry

Ingredients:

  • 1 tsp ghee
  • 2 tbsp Oil
  • 2 to 3 sticks of cinnamon
  • 1 pinch of star anise
  • 1 pinch of cloves
  • 1 pinch of cardamom
  • 2 large red onions (chopped)
  • 6 cloves of garlic (crushed)
  • 3 tbsp ginger paste
  • 2 tbsp garlic paste
  • 2 tomatoes (quartered)
  • Salt to taste
  • 1 Marinated chicken
  • Curry powder (Mine is home made)
  • Water (in case your curry is too dry or you would like more gravy)

Method for cooking spicy chicken curry:

  1. Place a pan on stove, turn the stove on and wait for a few seconds until it gets slightly hot.
  2. Add some cooking oil, followed by some ghee. The reason why we must add some cooking oil first is to prevent the ghee from burning so that we will be able to retain the taste of ghee.
  3. Add cinnamon, star anise, cloves and cardamom.
  4. Add onion and some crushed garlic. Cook them until the onion turns slightly golden brown.
  5. Add ginger paste, followed by garlic paste.
  6. Add tomatoes and mix them well.
  7. Add the marinated chicken and put the lid on for ten minutes right away to let it cook.
  8. Then take the lid off and mix the chicken well.
  9. Add some curry powder.
  10. Add salt to taste. You may not need a lot because some salt have already been added in the chicken marination earlier.
  11. Mix it well and add some water if you would like more gravy or in case it is too dry.
  12. Put the lid on for the last ten minutes.
  13. Spicy chicken curry is ready to serve.
