That is all besides the point. I have a few orders in for the weekend that I have to fulfill. More of that to come. After a trip to Costco (shout out to @alexpmorris) I have a USDA Prime Rib and Baby Back Ribs. I will be cooking these like a Southern Jerk(another one of @xtrodinarypilot projects and I would like to know which one should I share this weekend? I can give 2

When I was growing up, hog butchering was such an event. I miss life on the farm.
There are some definite farm-life bonuses! I haven't eaten pork from the store in years, and there is just nothing quite like our fermented-apple finished hogs, the bacon is insane!
That said, I can't wait to read about how your acorn finishing project turns out!
I can only eat the grass fed stuff. I don't think Costco is up to speed on that yet.

Wild hogs are considered 'pastured', which is whatever hogs eat, which is almost anything. It's a lot better than any feed lot grown meat. Sounds great, can't wait! Wild liverwurst is the best, depending on the quality of the groundwater.
I have heard there is open hog hunting in Texas. Is that true?

that's what we do with the wild caught baby hogs, we gorge them with apples and nutty feeds for months before slaughter. You are on to something.
A lot of Iberian hams are fed acorns full time. Unreal taste... and price, unfortunately.
That will be my next hog project. Acorn... Hopefully it has that same Iberian appeal and taste. Where can I find that?

I've actually indulged. I had no idea it was fed acorns prior to curing. They serve it at a place called Peska in Houston. It's sliced right off of the shank. yeah I wish I could pull that off. the Jamon can be purchased at Cotsco.

I couldn't resist. Want to hear something funny? The customer I cooked the brisket for called me last night and wanted to know how I get it so tender. Telling them I made love to it may turn them off to eating it lol.
