INGREDIENTS
2 cups halved cherry tomatoes or diced plum tomatoes
1 cup diced English cucumber
1 sliced avocado
1/4 cup of sliced red onions
1 lemon - juice (or lime)
1/4 cup chopped parsley (or cilantro)
2 tbsp. extra virgin olive oil
salt and black pepper
