Making Mini PIZZAS with Leftover Sub Rolls ~ Easy, Cheap and Convenient

I call these MINI PIZZAS. My local grocery store has a reduced section where I get these day old sub rolls. They come 3-4 in a pack for .99 cents...a bargain! When I see them I purchase and freeze. They are so cheap and I can use them for soooooo many things. I use them to make sandwiches, homemade croutons and stuffing....just to name a few.

Today I used a couple to make some mini pizzas.

Sometimes if they are thick I will cut them in half but today I left whole.

I just use the toppings we like for pizza.
First I put down a scoop of pizza sauce and spread.
Sprinkle with some garlic powder, basil and oregano.
Sprinkle with Parmesan cheese and put on a healthy dose of shredded Mozzarella cheese.
Top with slice onions, a little bell pepper and jalapenos, black olives that I needed to use and some cute little mini turkey pepperoni.
Baked at 400 degrees F for 10 minutes or until the cheese is melted and bubbly.

These little pizzas are so easy, convenient and good! I also use leftover English muffins, bagels and plain white bread to make these mini pizzas.

tonight for use was what needs to be eaten before it goes stale or bad. Ended up with a Mexican cheesy hamburger bowtie noodle dish with Sour cream and extra shredded cheese on top. Way too much cheese but it is good.

Coming from a city that had lots of very good international foods I have had to learn to make my own if I want something. Pizza dough is a challenge if I want to achieve the taste I am longing for but I keep trying. I usually make 2 at a time as my husband likes pepperoni and he is lactose intolerant but I make both with a bowl full of veggies that have been salted for a little while so I can drain them and not get a soggy pizza.
Onions, mushrooms, peppers, olives, marinated artichoke, fresh tomatoes, sauteed garlicky spinach are a few of the veggies I use.

Yum! I love chickpeas, kale, and red beet as a topping randomly came up with it and it was delish with buckwheat crust!
