HEALTHY Pancakes are todays special in My HEALTHY MEAL of the day #3

Here are some more suggestions on quick and easy healthy meals for breakfast, lunch or dinner:

Note: I measure some of the food and separate in small meals in order to eat healthy and not to exceed the amount of daily calories intake. But there is one good news - you can eat vegetables as much as you like.

Todays special for breakfast - healthy pancakes recipe!

For the mixture of the pancakes you will need 25 g of oat flakes or quinoa ground in a coffee grinder till it becomes like flour. If you are too lazy to make your own flour, then replace with 30 g of whole grain flour.

Add 1 egg and water enough to mix and get a rare slurry.

Use a non-stick pan to make the pancakes and do not add any butter.

Garnish the ready pancakes with one of the following combinations of choice:

  • 50 g cottage cheese with 1 tbsp. of cocoa
  • 20 g of yellow cheese;
  • 20 g of honey;
  • 50 g of avocado, cocoa, coconut sawdust;
  • 1 banana, cocoa and coconut sawdust.

Before noon:

200 g of yogurt with 1 tbsp. honey.

Lunch:

Zucchini Stuffed with chickpeas.

Carve out and stew the inside of 3 zucchini together with 1 onion, 2-3 cloves of garlic and 1 carrot. Wait to soften and add 150 g boiled chickpeas.

Season with spices of choice, stir and fill the zucchini with the stuffing. Bake in the oven on low heat till they get gold color. Add parsley while cooking and still warm .

In the afternoon:

30 g of yellow cheese garnished with vegetables of choice and couple of olive oils.

Dinner:

Salad with wholegrain pasta, salmon and cherry tomatoes.

Cook 100 g of whole grain pasta in boiling salted water. When ready - rinse and drain.

The salmon (100 g) is cut into cubes and fried until golden in non-stick pan.

Wash and tear the green salad leaves into peaces. Add 1 cucumber and the cherry tomatoes.
