How about some PASTRY with RASPBERRIES Steemians?!

I have been traveling now for 8 days (with many more to come) and I've posted a couple of travel posts (which there are links below), but I wanted to make sure to get a food post in here and there just to stay up with my followers.

For those of you who do not follow me, that's intended to be a joke. I love, I love, love, love raspberries. Without question, they are my favorite. And I just left raspberry heaven in Southern Chile. What was I thinking?

Can you post the recipe please? Mothers day is coming up and I'd like to try screwing this up royally as it's the thought that counts.

Who said anything about my mother? O_o

Well I guess you don't have to make anything for your mother on Mother's Day, but I thought that was the implication in your post.

I'm a horrible child. When she pushed me out she probably expected better.

Love it, love it, love it, a request for the recipe!

Here you go:

RECIPE

Yield: 12 danishes

Ingredients

2 sheets (or one 17.3 ounce package) puff pastry
1/4 cup butter, melted
3/4 cup sugar, divided
6 ounce cream cheese, softened
1 teaspoon vanilla extract
3/4 cup raspberry preserves

Instructions

  1. Preheat oven to 400 degrees F (200 C) and line a baking sheet with parchment.
  2. In a small bowl mix softened cream cheese with vanilla and 1/2 cup sugar until smooth.
  3. Lightly flour a clean work surface and lay out one sheet of puff pastry. Brush with half of melted butter and sprinkle with 2 tablespoons sugar. Cut into 6 strips lengthwise.
  4. Hold both ends of each strip and gently twist a few times then swirl them into coils. Tuck ends underneath and press together with opposite end in center then place on baking tray. Repeat with other 5 strips then repeat last 2 steps with second sheet.
  5. Spoon about 1 tablespoon cream cheese mix into centers of each followed by 1 tablespoon raspberry preserves.
  6. Bake for 18 to 20 minutes until pastry is golden then remove from oven a cool for a few minutes before serving.

I was hoping this would be easy. In our household we don't use premade ingredients for the most part so unless something can be obtained from a local farmer, like the preserves can most likely, it has to be made. Know how to make the dough?

No, I used puff pastry which is an art that I haven't mastered yet, so I bought it pre-made.

Fair enough, we'll see what happens. I'll post pics if we end up making this.

Yay! Raspberries. Two summers ago I stumbled into the largest raspberry patch I have ever seen in the Colorado mountains. I didn't know they also grow in South America! These look awesome. Thanks for posting. Have a great day!

Oh, South America big time. Next time you're at Costco, check where it is from. Southern Chile is some of the most fertile land in the world. Everything grows there, even the stuff you don't want

That's the thing about raspberries...I learned from the forest service people that they like to grow in the worst soil in/on rocky steep banks and places that other plants couldn't handle. I have thought about putting some in a garden or spot in my yard that needs something to grow in a difficult spot.
