Our relationship to food is unique for this day and age, and we love to share meals, formulas, and photography of it! 

For more info on how deeply we honor food, please read our previous post. We are known in our local community for feeding 40,000 free meals a year, so we get a lot of food donations towards that mission.

Because of this, we almost always have an abundance of bananas! Grocery stores regularly throw away bananas that are even slightly past their prime, so we often end up with crates of brown or mushy bananas that were otherwise going to the trash.

Nothing goes to waste in our sustainable community: we freeze choice fruits for banana smoothies (which are so smooth, thick, and creamy that they are essentially vegan milkshakes), almost spoiled bananas are great for vinegar or wine making, and super gross ones are used to make compost.

Banana pancakes are another Eden Knight classic for utilizing our banana abundance! For cooking and baking, older, beat up bananas are actually preferable. The flavor is sweeter and stronger than a perfectly ripe banana, and the texture adds moisture to the recipe.

That's a tasty meal there in that last photo! "Old" bananas are the best bananas! They make a great 2-ingredient pancake, too, with just bananas and flour, nothing else. Just mash those old bananas, add some flour, and keep stirring and creaming them together, adding more flour as needed, until it all turns into the consistency of pancake batter. It takes a few minutes to get the gluten in the flour all hydrated and elastic, but It's like magic for making thin crepe-like pancakes.

Sometimes grocery stores will throw out bananas that are too green, too. Put those in a paper sack with some apples, set it in a warm place, and the bananas will get ripe. The apples give off ethylene gas that will ripen the bananas. Most bananas are gassed with ethylene these days, but some don't get enough, I guess.

We make banana pancakes frequently! They are a great way to use bananas, and it's easy and convenient to whip up a batch for a large crowd.

Banana pancakes sounds yummie as I normally have mine with ice cream and bananas.
