Vinegar is such a treat. My grandfather drank it everyday with honey and water. My family drank it the same, sometimes cold, and often hot, especially for curing and soothing sore throats and congestion.

All the flavors at the Garden of Eden have been amazing, but one of my favs is white mulberry. It's a true culinary treat to add it to any dish--my favorite is splashed on a fresh salad hand-picked from the garden. Mmmmm.. This is a GREAT post.

How do you make it without the mother. I like the idea of making vinegar but I don,t have unprocessed vinegar to get a mother from. Cheers

Great question @mcwhackery! If you cover fruit with a sugar-water solution, put a cheese cloth over it, and set it on a shelf for awhile, it will eventually turn into vinegar because organisms from the air will start the chemical reaction. It takes longer, and results are more varied because you're not so sure about what creatures are in the air, but eventually vinegar will form.

You can also ferment the solution using yeast of any type, even baker's yeast will work. After the fermentation has been accomplished, acetobacterium will be quickly attracted to the alcohol and metabolize the ethyl-alcohol into vinegar.

If you look up "flowers of wine" you will see what this bacterium looks like and can quickly identify whether you have a mold or acetobacter.

I had no idea you could use a variety of fruits to make vinegar! How fascinating! I wish I had seen this about a week ago as I had a farmstand watermelon that tasted a little off - so we tossed it. I love these tips @gardenofeden Thank you.

Oh yes, that would have been PERFECT for vinegar! We are so grateful for even the fruit that's going "bad", because it means it's time to make a batch of homemade vinegar. If you ever make apple pie, you can use all the cores and peels to make an excellent apple cider vinegar. Knowing this skill means you can utilize a lot more "waste" produce.

My first attempt at making Spiritvs Vini turned into red wine vinegar. I look forward to getting a nice vacuum pump and making distilled vinegar. :)
