Meal Planner #1 - Sweet Peas in Tomato Sauce with White Rice on the Side

Hi to all my steemian friends!

Living with family/partner involves lots of cooking and planning ahead so that when those little ones get back from school or when coming back from work - everyone can have a nice home meal at the table.
It's important for me to have these homemade meals and the 'eating together' experience.

I love posting simple home recipes so that anyone would be able to try them out and enjoy that experience as well. The best part - you do not have to be much of a "kitchen expert" to make them!

So,I decided to add to my posts not only food/dessert recipes but also MEAL PLANNERS to help out with that "what's for dinner" question.

I hope this will help out and inspire you try them out for yourself/your family!

Meal planner #1: Sweet Peas in Tomato Sauce with White Rice on the Side

Categories: Children's Food/ Lunch/ Vegetarian Recipe/ side dish

Peas in a sauce that can go well with any kind of rice and chopped salad on the side.

Ingredients:


2-3 tablespoons canola oil
1 medium sized onion, diced
3 tablespoons tomato paste
1-2 grated tomatoes
Salt and pepper to taste
1 bag frozen small peas
4-5 cups Water

Method:

  • In a large pot, heat the oil over moderate -high heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Add tomato paste and mix 2-3 min.
  • Add grated tomatoes, remaining ingredients and season to taste
    (Make sure water covers all the food, if not, add more)
  • Bring to a boil, stirring occasionally for 2 min.
  • Cover, reduce the heat and let peas cook in the simmering sauce, stirring occasionally, until the peas are tender (about 25 minutes).
  • Turn off heat and let sit covered for five minutes.
  • Serve atop white rice.

Yummm... I love peas! But not so the frozen sweet peas but we have the canned ones (what my niece calls, 'powder' peas as they taste kinda powdery in your mouth!) Not sure you can find them there, but all our canned ones are that. Works well to thicken soups and stews too! :)

Haha! loved the 'powder peas' expression! I actually don't think ever even tried cooking peas from a can, LOL:)
Maybe Ill give it a try :)

It is so great that you plan ahead so that your family can enjoy a home cooked meal. This meal looks so good and is sure to be a hit with children. And eating together is such an important experience for a family too!

I don't have a choice:) I noticed that if i don't plan their meals ahead Id be having to deal with fast last minute cooking- which does not suit me since I like taking my time in the kitchen and enjoying what I make :) The taste is also different ! You can taste food that you get from love :))
