MyTurn - What is it?

Before I get to the soup, let me tell you about MyTurn.
Oftentimes, we see a post about a recipe or a project that catches our attention. We think about making it and sometimes even leave a comment that we would try to make it. But then we get busy or maybe we forget about it. However, there are those occasions when we do make it. This is MyTurn. It’s when you get your turn to recreate it, put your own spin on the recipe or the project. It's a great way of acknowledging the original creator's work or a way to show how someone has inspired you.
Let's show our appreciation for original content creators by using the #myturn tag.

Back to the Soup

@leelektrik posted his Lettuce and Courgette Soup Recipe as his entry for @progressivechef's Steemit Iron Chef contest. If you haven't heard of it, have a look at #steemit-ironchef. You'll be amazed at the creativity and talent showcased there every single week.
So back to the soup. The theme for Steemit Iron Chef 2018 Act 1 Round 4 was lettuce and @leelektrik made lettuce soup for his entry. I'm not used to cooking my lettuce but @pandamama mentioned it to me, raved about it and told me I should give it a try. Soon after, @leelektrik had posted it as his entry. This made me really curious, so I decided to try it. And here we are, a #myturn entry, my spin on @leelektrik's Lettuce and Courgette Soup.

Lettuce and Zucchini Soup - A Vegan Version

Courgette? Zucchini? Yes, one and the same.
@leelektrik, does the photo look familiar? I even pulled out the red chopping board to make it look as close to your photo as possible.

I didn't have any potatoes available so I used sliced baguette instead. I cooked the above ingredients with the bread and miso soup until the zucchini pieces were tender. The mixture then went in the blender then puréed until smooth.

I wanted a vegan dish, so I made cashew milk instead of using cream for the topping.

Below is the cashew milk. I put some of it in a cream whipper to get a foamy and thicker texture. Also in the photo are almonds as I decide to also make almond milk. But that's for another recipe.

I ladled the thick hot lettuce soup in a soup bowl, topped it with cashew milk foam, drizzled avocado oil, then sprinkled thyme and edible flowers. Lastly, I toasted some baguette slices to serve with the soup.

It was tasty and delicious! I really enjoyed it and would definitely be making it again. Who knew you could cook lettuce and make it into a wonderful and satisfying soup?

Oh wow! Both dishes look equally delicious! I've been keeping a list of dishes that I'm looking to recreate when I get an oven. so #myturn is definitely in the cards for me. I like the variations you did, tita! Even if I'm not a vegan, I'm sure that I would slurp this down in a heartbeat!

Great MyTurn on the lettuce soup. I often use bread to thicken soup when I'm using a delicately flavored main ingredient like lettuce. I like your combination of adding the miso and cashew flavors to your version. This is a new combination for me and I can't wait to try it out. I really like how the MyTurn can take the original dish in a totally different direction. It shows us the potential for endless variations, as the original dish is looked at from different points of view.

Adding the bread instead of potato is something new for me. Interested to know if that changed the texture or taste in any way

The bread serves as a thickener. To answer your question, it does change the texture of the soup. It has a lighter effect than potato. And like @chefsteve stated on his comment on this post, it’s an option for a thickener when used with delicately flavored ingredients.

As for taste, it didn’t change much as I used plain baguette. If I had used flavored breads, it could have. Other than the fact that plain bread is what I had on hand, I didn’t want other flavors to overpower the lettuce and zucchini, so it was perfect for the soup!
