Fish Hot Pots Are Made With Lots Of Fresh Fish

Each day in late afternoon, the fisherman bring their boats in from the sea at the port of Chenggong with plentiful fish of many kinds. The area of the Sanxiantai Dragon Bridge  has always been fished by the Amis.  The Amis people have always called the small island Nuwalian. Nuwalian means "the eastern-most land."  In the Amis tradition there is a legend that speaks of a Sea dragon which lives in a cave and is the  protector of Nuwalian Island or Sanxiantai. It is their belief that this dragon guards the island and makes sure that people do not take more fish than what is being consumed.  It is no wonder that this area is known for "Fish Hot Pot."

There are many "Fish Hot Pots" in Taiwan, but this one is set apart in a couple of ways. It is made in stone hot pots, out of the catch of the day, which is often shark.  Every cook takes time first thing in the morning to gather wild greens and also vegetables from the garden. This is one of the daily routines that make such a great number of hot pots possible.  Any good hot pot begins with a variety of fish, greens, and vegetables, seasoned with many local herbs. 

The other way that these hot pots are set apart, is by the freshness of the ingredients.  Every hot pot begins with the fish of the sea, the herbs and the vegetables of the morning. Have you ever had a fresher hot pot?  After a Sanxiantai Dragon Bridge Adventure that ends in  a robust sunset, it must be time for hot pot.
