Steemkitchen Recipe Contest 8 - Week 5 - Very Berry Crumpet Stack
I must admit I'm not a breakfast person, and I know this is so wrong from a health point of view as this should be the most important meal of the day. Our bodies need fuel, not so? Good fuel though, no fast foods and definitely not oily fried breakfasts which we all are so fond of!
My breakfast offerings for this week's Steemkitchen Contest may not be the healthiest; but it offers a savoury and a sweet plate, and at least has been made with basic pantry staples and fresh berries, so no need to run out to the stores!
Before we can have this sweet breakfast dessert, we will start off with an Eggy Breakfast Stack.
Prep Time - 40 minutes
Cooking time - 30 minutes
Serving - 4 servings - 24 crumpets
INGREDIENTS REQUIRED
CRUMPETS
- 3 Eggs
- 2 Tablespoons Sugar
- Pinch of Salt
- 2 Tablespoons Butter, melted
- 300 ml Buttermilk
- 375 ml Self raising Cake Wheat Flour
- 1 teaspoon Baking Powder
- Olive Oil for cooking Crumpets
TOPPINGS
- 4 Eggs
- 1 cup Cheddar Cheese, grated
- 8 Cherry Tomatoes, halved
- Strawberry Jam
- Honey
- Berries
- 500 ml Greek style double cream Yogurt
METHOD
- Beat eggs, sugar and salt together
- Sift flour and baking powder & add to eggs alternately with melted Butter & Buttermilk
- Place a very thin layer of Olive Oil into a non stick pan.
- Drop spoons full of batter into hot pan.
- Turn when bubbles form and cook the other side.
Light and fluffy Crumpets
TOPPING METHOD
- Cook Eggs in a non stick pan with a tiny amount of Olive Oil (cover with lid to kind of steam cook eggs, no need to baste in oil)
- Halve Cherry Tomatoes and cook in same pan.
SAVOURY EGGY ASSEMBLY LINE
- Using 3 crumpets per person - layer with grated Cheese, Tomatoes & lastly Egg
Now onto my favourite part :)
VERY BERRY CRUMPET STACK ASSEMBLY LINE
- Using three crumpets, layer bottom two with Strawberry Jam & sliced Strawberries.
- Top with a generous layer of Double Cream Greek style Yogurt.
- Finally top with the stars of the show - sweet and tart Blackberries, Gooseberries, Raspberries & Strawberries
- Lather with Honey

Hmm...looks delish and a great breakfast idea. Someone was telling me the other day about a crumpet batter recipe with yeast and which makes both a big quantity and lasts forever. The downside is that you have to plan it about 2 days in advance. This is giving me a great idea for breakfasts for my accommodation spots that have no cooking facilities. Thanks, @lizelle!

You're right my friend is wrong not breakfast I used to breakfast but that made me very bad in my body and now it's a rule that I have to leave home but before breakfast so I have more energy for the day
There is nothing better than something salty and sweet at the same time and I like buttermilk here you eat a lot

Have not had crumpets in years and that looks Oh so good @lizelle I believe we call them crumpets some places in the world call them drop scones or something along those lines.
No matter what name they have, they are tasty fancy like you made, or on their own with syrup.
