Steemit Sandwich Contest Week 83 | Green Curry Egg on Nann

It’s been a while but I’m back! I just couldn’t resist sharing in the fun with my fellow sandwich elves. When @jaybird announced week 83 of his Steemit Sandwich Contest with a challenge to use something I’ve never cooked with I was super excited! I’ve had this little jar of Thai Green Curry Paste but haven’t tried it! Looks like today I’ll do it!

Just like the King himself, we love our egg sandwiches. I love curry too, so hey let’s try it out!

Green Curry-licious

  • Thai Green Curry Paste
  • Fresh Eggs
  • Tiny Sweet Peppers
  • Fresh Mushroom
  • Red Onion
  • Coconut Milk
  • Almond Flour
  • Arrowroot Powder
  • Fresh Basil
  • Fish Sauce
  • Coconut Oil
  • Salt and Pepper to taste

I kind of staged everything because I realized everything would need to be ready at the same time. I felt like I needed 4 more hands to do this one right. Pans out, eggs ready, Almond flour and arrowroot in the blender….


Ready, Set, Go!

Wash and Chop…


those little peppers, onion and and mushrooms.

A little spoon of Oil…


into the saucepan and Sauté! First the mushrooms, then the peppers and lastly the onions! What a great smell!

While you sauté…


Let’s make curry sauce. Add the curry paste and creamy coconut milk to a saucepan and heat it up! Salt/pepper to taste…perhaps add more curry, it’s your call! After simmering for about 5 minutes pour 5 tablespoons into the sautéed veggies, stir and set aside.

Blend the Nann…


Almond flour, arrowroot powder and Coconut Cream, just 3 ingredients! Into the frying pan and browned on each side. These are a nice bread alternative...no bloaty heavy feeling after dinner.

Meanwhile…


I whisked the eggs, added salt and pepper and the cooking continued! Whew! Almost there!

I was flying around the kitchen like a bird in a cage!

Assemble…


the warm naan, the eggs and all of those curry veggies, yum! Spoon the savory green curry cream on top!

It’s simply Egg-ilicious! Enjoy my Sandwich friends

Holy moley. You are just on a tear. I didn't realize that Nann was so Keto friendly. I'll give this a try in the very near future, but I can see lots of possibility with it.

I've just finished my last meal of the day and my dishes will wait until I'm cooking breakfast tomorrow. It's the beauty of bachelorhood and living alone :)

lol, you say the funniest things @bigtom13, this was fun to make (and even better to eat, although you'll need to have a fork and napkin on hand, lol) Yes, this Naan is Keto friendly, I should have mentioned that. Very good to, would work well with many additions. My dishes did wait a little while, no worries right? I wanted to savor the sandwich moment! Have a great Saturday!

Aww, you are so kind my friend! Thank you, I was certainly thinking of you and my friends using Keto when I made this bread. I thought you might like it :) It has a nice texture and certainly substantial enough for a sandwich. Hopefully your hubby will like it too :) Oh, btw....I have another friend I was telling about your Siberian Pine Nut oil. Are you still having success with it? I would love to tell her...her current prescription is $350/month, none paid by insurance, and its not working I was hoping to offer her some help by using the oil. I really appreciate to hear your thoughts :) Have a wonderful Saturday!

I've actually stopped taking the reflux medication altogether, it really works. Your friend must just be careful in the beginning, perhaps start by cutting back on the medication but take the oil twice a day. Eventually when the reflux has settled, she could go down to once a day and only take 5ml. It's really worth a try, as that's terribly expensive plus it has side effects after long term use.

My Gawd woman… you are a bread making maniac. I usually find myself wishing I had several other arms for things I’m cooking. Have you ever made enchiladas? Those require another set of ligaments for me too. Great post @birdsinparadise! I’d eat the crap out of your naan curry breakfast sandwich. :)

You for sure know about kitchen acrobatics! It's crazy isn't it? I was worn to the bone after this prep, whew! Nearly needed a quick siesta after that. You are right, enchiladas are the same way...a little sauce here....chopping there....making tortillas here....bake bake geesh! The things we do all for our love of food! I don’t know if I could have arrow root powder. I could have psyllium husk if I could find it. That might work as an arrow root replacement. These days the cheese you put on anything looks good to me. I don’t know if it’s my bodies way of intuitively trying to get me to eat something it needs or if it’s the bacteria trying to steer me down the wrong road. For now I’m abstaining from cheese still but am toying with the idea of eating goats feta… idk, we shall see. I’ve been in real good shape lately so probably best not to toy with a good thing. If I can find psyllium husk you’ll be seeing some tortilla recipes being posted by me.

I'd just crack an egg, fry, and throw on bread. This however is like gourmet cooking. Honestly though, as I have tried to lean to more "natural" alternatives, when dealing with my MS symptoms, I've learned a great deal about food, and benefits of certain types.

My first experience with curry was actually in Germany in the service. I ordered fries from a club, and the ketchup was to die for! When I asked why it tasted so different, the bartender told me it had curry mixed in.

I'll also admit, I'm a sucker for fresh vegetables! And the mushrooms have me wanting morrels... oh I digress!!

Oh my goodness, ketchup with curry? That sound very interesting and I think I'll have to try it out on something..... I'm so glad you stopped in and enjoyed the post today. It was fun to make and I love making and sharing recipe alternative for health. I'm not very familiar with MS and it's relation to food but I'm certain eating a clean diet can only help. I have a steemit friend who's husband has MS and they are both now vegan. I know it has helped. Be well friend, thanks for your kind words!
