The Birds are on the Road…Camping!


We decided to get away for a few days so Mr. Bird could do a bit of fly-fishing. Since I helped @jaybird judge for last week’s sandwich contest I watched from the sidelines. I didn’t want to let @jaybird down by not jumping into week 70’s Steemit Sandwich Contest! Hard to believe as the king of sandwiches, @jaybird has led this community of sandwich elves for over a year. Truly a kind and generous guy! He brings lots of laughter and fun to the Steemit Community!

Well, as I said, we’re on the road. We always bring our little camp stove so I knew we could cook a little something up for the Steemit Sandwich Contest. I prepped a few items the day before we left to make the process a bit easier.


Mr. Bird set off early to fish and by the time he got back to the campsite he was very hungry! I told him to fire up the stove and get ready to grill!

Saucy Tomatillo Beef with Lemon Aioli Mayo Sandwich


Meanwhile, yesterday…


The Bread

  • Bread Flour (3 ¼ cup)
  • Yeast (1 ½ tsp)
  • Almond Milk (2 tbsp.)
  • Maple Syrup (1 tbsp.)
  • Water (1 cup)
  • Olive Oil (2 tbsp.)
  • Egg (qty 1)

  • Mix all and knead, set aside to rise until double in size. Divide into 8 pieces. Shape into round rolls. I sprinkled the tops with a few sesame seeds and then covered these little beauties with a towel and let rise. Bake at 400 degrees for 20-25 minutes

The Tomatillo Sauce

  • Fresh Tomatillos (qty 5)
  • Fresh Red Onion (1/2 cup chopped)
  • Fresh Garlic (1 clove)
  • Jalapeno Peppers (1/2 diced)
  • Fresh Lemon (2 tbsp.)
  • Cumin (1/2 tsp)
  • Olive Oil (1 tbsp.)
  • Cilantro (1 handful chopped)

  • I cooked the Tomatillos water for about 5-10 minutes, really just until you could say they were tender. Then thrown them in your favorite blender along with all of the other ingredients and blend, blend, blend. Set this aside.

Creamy dreamy Spicy green deliciousness

The beef really needed to marinate overnight which worked out well since we were leaving the next morning.


The marinade

  • Thinly sliced beef (1/2 lb.)
  • Fresh Garlic (2 cloves minced)
  • Red Onion (1/4 cup diced)
  • Cumin (1 tsp)
  • Corona Beer (1 cup)
  • Olive Oil (1 tbsp.)
  • Sea Salt/Pepper (1/2 tsp)

Mix this all together…love that beer add! Place the beef in the marinade, seal and into the fridge for the night!

Meanwhile….back at the campfire


Mr. Bird has been grilling and I think we’re about ready!

Don't want to forget the Aioli sauce, so simple!


  • Mayonnaise (3 tbsp)
  • Minced Garlic (1/2 tsp)
  • Sea Salt/Pepper to taste
  • Lemon Juice (1 tbsp.)
  • Olive Oil (1 tbsp)

  • Whip all ingredients together in a small bowl. Spread this liberally over your toasted bread!

I thought I would chop up a bit of cucumber and red onion for garnish…you know, add a bit of crunchy-ness to the sandwich! Layer on the beef, add the Tomatillo sauce....yes liberally! Top with red onions and enjoy!


Toasted up the buns! Assemble, and Enjoy! Bright and sunny camp side!

I love how whether on the road or vacation you crazy SSC ppl are still making entries lol. I mean I guess I still found a way to make manwiches on vacation but still. It's truly hilarious but also so awesome!

This is a pretty elaborate piece tho for road food lol. Home made bread and all those flavours in that marinade sounds fantastic.

I would have thought that it was going to be a fish sandwich from the intro. Guess Mr. B came back empty handed?

@jaybird, Thank You! I'm so glad you stopped in. Mr. B releases what he catches...although a fellow camper caught a Hamerhead Shark while we were walking on the beach yesterday, Yikes! Yum! I love tomatillos and tomatillo sauce/salsa anything. I don’t know how you are able to magically and effortlessly bake your own bread but you’re a pro. Great sandwich or should I say woMAN which.

I don’t know, I don’t have so much luck with breads. Maybe if I study your recipes long enough I’ll get the bread making gene by osmosis or something 🤷🏼‍♀️

Oh wow this is a gorgeous campfire sandwich mrs Bird, you are a super duper SSC sandwiteer not letting the side down even when on a camping trip, looks delicious! Happy camping mr & mrs Bird :)

Thin slices of meat with a well prepared sauce is the key to success from any kind of hamburger. One thing that you do that a few people did, is toast the inside bread for the sauce didn't go to bread, that is a thing that changes not only the experience of people who are eating, but also the taste as well.

Thanks so much! Yes, we did need to toast the bread for this saucy sandwich otherwise it would fall apart, ;) How do you usually prepare? I think some sandwiches are designed to soak with oils and spices, yum! Appreciate you stopping in! All the best!

I always toast a bread first to guarantee that the sauce don't flood the bread. For me, with bread sealed it most easily to eat.
