FESTIVE QUINOA for STEEMIT CULINARY CHALLENGE - #43 "Autumn Feast Special" ๐ŸŒบ๐ŸŽƒ๐ŸŒบ

Hello my Dearest Steemians,

This is my SAVORY ENTRY for for the Autumn Feast Special Culinary Challenge, hosted and also judged by our wonderful @woman-onthe-wing ๐ŸŒธ๐Ÿ’–๐ŸŒธ

I have to hurry to make sure I am not late for the deadline, so I will not write a very long story about this recipe. All I can tell you is that this is a perfect dish for special occasion such as impressing your in laws on Thanksgiving.

Although, there is one more thing I would like to suggest, based on my own taste and experience. I am a big fan of the buffet style when I can combine different flavours by mixing few different dishes that compliment each other. In this case, I would recommend two of my older recipes from my blog. One is a Kale Salad and the other is Tempeh Kebabs.

FESTIVE QUINOA
Quinoa Salad with Pear, Arugula & Pomegranate, served in Acorn Bowl
Vegan โ€“ Gluten Free โ€“ Refined Sugar Free โ€“ Cholesterol Free

INGREDIENTS FOR 4
โ€ข Quinoa 2 cups cooked (follow the cooking instructions on the package)
โ€ข Acorn Squash 2
โ€ข Pear 1 (cut into cubes)
โ€ข Baby Arugula 1 cup
โ€ข Pomegranate ยฝ cup (just the seeds)
โ€ข Pecans ยผ cup
โ€ข Maple Syrup 1/2 cup
โ€ข Oil ยผ
โ€ข Pumpkin spice
โ€ข Garlic powder (or dehydrated minced garlic)
โ€ข Himalayan pink salt
โ€ข Baking sheets 2
โ€ข Parchment paper
โ€ข Brush

ACORN - PROCESS
โ€ข Preheat the oven to 400F.
โ€ข Cut tip on the bottom end of your acorn squash.
โ€ข Cut then 1/3 of the acorn from the bottom end.
โ€ข Remove all the seeds from the middle of both pieces.
โ€ข The 1/3 is to make a bowl to serve the quinoa salad.
โ€ข Cut the top of remaining bigger (the 2/3) and cut it in a half so you will get two moon shaped halves.
โ€ข Slice each half to create the moons and place them on baking sheet lined with parchment paper.
โ€ข In a small bowl, mix the oil with 1/4 cup of maple syrup and pumpkin spice.
โ€ข Lightly brush the moons, add salt with garlic, place them in oven and bake for 20 min and 5 min broil.
โ€ข When ready, flip them over, brush them again and broil for 5 min longer.
โ€ข Take them out and set aside.
โ€ข Place the acorn bowl on a separate baking sheet lined with parchment paper and bake for 40min and broil for 5 to 7 min. You may make criss-cross incisions with knife before you broil as shown on the photo.
โ€ข When ready, remove it from the oven and set aside.

PECANS โ€“ PROCESS
โ€ข Place the pecans in hot frying pan and roast them for 1 or 2 min.
โ€ข When ready, set them aside to cool down for several minutes.
โ€ข In a food processor, grind them by pressing the pulse button.
โ€ข Make sure they remain chunky as shown on the photo.

QUINOA SALAD - PROCESS
โ€ข Cut about 4 moons into smaller pieces as shown on the photo.
โ€ข In a medium size bowl, mix the cooked quinoa (make sure is not too hot) with all the acorn pieces, pecans, pear cubes, pomegranate and arugula.
โ€ข Add the remaining oil/ maple syrup mixture with salt and toss gently but thoroughly.
โ€ข You may add more maple syrup and pumpkin spice if you like.
โ€ข Fill your bowls and serve.

Note: I made only one acorn bowl, however, the amount of quinoa salad is for 4 servings. In the case that you wish to make four acorn bowls, you would need at least two, cutting each in 3 thirds. That way you would use the middle 1/3 to make the moons and top and bottom ends for the bowls. Make sure you have a very sharp knife and be careful.

Are you signed up on Steemit Chat Lena? I searched but didn't find you. I meant to ask you already if you'd like to be guest judge for the next round of SCC (theme posted Fri 13th, and pick winners on Wed 18th). It probably takes a couple of hours to judge the entries, but providing comments is optional so perhaps it would take even less time that that. I wanted to ask as it could be a good way to draw more attention to your own contest as I'd mention it and include a link. But I totally understand your desire for a break so if you don't want to do it now, perhaps some future round instead :-) I'm fine with anything!

I love quinoa and am always looking for different recipes to make. I would have never thought of the two together, but, what a beautiful presentation this makes! I can only imagine the blended taste of them.

I thought from the beginning that this would be something for you Denise. I am just having it for lunch, since I made so much, I am eating it for three days lol. I love kale salad. One of my favorites that I eat at least every other day. I will keep that in mind with the next day tasting better. I think with some things it gives it a chance for the flavors to meld together.
