Hello My Dearest Foodies,

This is my first recipe for MAKE IT HEALTHY PROJECT initiated by amazing lady @woman-onthe-wing. She was one of the first Stemians who took me under her wing when I was a newbie. STEEMIT CULINARY CHALLENGE that she was hosting at that time was where I've been given opportunity to show my work and rewarded for it very generously. I will be always grateful to her for that.

DILL CREAM CHEESE
European style Cashew Cream Cheese with Dill
VEGAN - GLUTEN FREE
Author: Lena's Vegan Living

INGREDIENTS

โ€ข Cashew 1 1/2 cup (presoaked for 6 hours)
โ€ข Apple cider 1 tbs
โ€ข Juice from 1/2 lemon
โ€ข Garlic powder to taste
โ€ข Himalayan pink salt to taste)
โ€ข Water 1/4 cup (you may add more if need it)
โ€ข Dil 1/4 cup (minced)
โ€ข Blend all the ingredients in a food processor except dill until smooth.
โ€ข Transfer into a bowl
โ€ข Add the minced dill a mix thoroughly.

For many years my family was living in a townhouse near POLISH PLAZA where we were shopping often, especially for European delicacies. One of our favorites was a cream cheese with dill. I wasn't vegan back then, however, now after many years, here I am recreating it based on the taste I remember. Although, I can't say that it tastes exactly the same, because I would be lying, nevertheless, I can say for sure that it's delicious, super healthy and easy to make.

Oh my, this is when I'm so glad you have a good camera that does your food justice! The consistency of this looks perfect! And so fresh looking with the dill. I can imagine the taste, oh Lena I will write this in my recipe book and make it for sure. It would go wonderfully with my homemade scones I can almost taste it right now!

Oh it looks absolutely delicious! We are on the same wavelength as I made pasta earlier with a creamy dill sauce! Fresh herbs make everything just a bit yummier! ๐ŸŒฟ

My daughter bought the dill for borscht she made Thursday and she gave me half, because you know how it is when you buy herbs. They sell you more then you need, lol.

One of the things I found the hardest to let go of when I decided to go totally vegan was cheese. Not so much the hard cheeses, but I used to love goat's brie and ricotta. But making a spread from cashews is just as, if not more tasty as milk based cheese. Will use your recipe with dill next time I make it Lena. ๐Ÿฆ‹

For me was more difficult to give up the melted cheese on pizza, lol. Although I do not eat pizza often, I do treat myself with Daiya once in a while.
