The African kitchen Show #3 (How To Cook Edikan Ikong Soup)
Hello my healthy good looking friends! Welcome to the third edition of the African kitchen show. How has your week been? As for me I couldn't be better and I'm excited that weekend is here.
This week I cook a palatable, enchanted Delicious meal for us! Yes one of it's kind, One of the soup that every tourist in our State will ask for when visited. The Ibibio owned own this soup and we called it Efere Edikan Ikong (Vegetable Soup) mind you, once you eat this soup, you will automatically speak out language😅
Edikan Ikong Soup
This soup is not only delicious but it comes with untold benefits you will like to tap from. The key ingredients for this soup is fruited pumpkin leaves, and water leaves.
We called fruited pumpkin leaves "Nkong Ubong" in ibibio language and its botanical name is "Telfairia Occidentalis". We use this leafy vegetable for both culinary and Medicinal purposes.
Health Benefits Of Edikan Ikong Soup:
The leaf is a rich source of minerals and Vitamins. It contains potassium, iron, calcium, magnesium and folic acid which makes it highly nutritious. As I stated before, it contains Vitamins like A, C and K and a lot more minerals. More to this researchers found out that eating meals which are rich in fruited pumpkin leaves helps prevent cancer, reduce cholesterol levels and blood glucose. It improves blood count and lastly beat diabetes, you see you can't stand to lose out in all this benefits.
Then...
The water leaves (we called it mong mong Ikong in ibibio language) also known in other names like Florida Spinach or Ceylon spinach is so good! The oxalate contains in the leaves can help those with kidney disorder, it's healthy for the bone, and the eyes because it a good source of Vitamin A and excellence source of C Vitamin. It's good in cognitive health too, it contains thiamine, niacin and riboflavin, protein, fat fiber and carbohydrates. Let's Gets Cooking!🔪
Ingredients Needed:
Fruited pumpkin leaves, water leaves, meat, smoked fish, stock fish, crayfish, periwinkles, pepper 🌶️ onions, salt, seasoning cubes and palm oil.
Pre-preparation:
- wash your fruited pumpkin leaves chopped it and keep aside.
- wash your water leaves, chopped and squeeze it then keep it aside.
- Wash and cook your stockfish, add seasonal cubes, salt and palm oil to it.
- Wash and cook your meat, season it with onions, Peppers, seasoning cubes and salt to taste.
NOW TO THE COOKING:
Wash your unshelled periwinkles and add to the the Cooked stockfish.
Wash your smoked fish and put in the cooking pot.
Pound shrimps and and and allow it to cook for some minutes.
- Add your seasoning meats to the pot and allow it cook for some minutes.
- Add the water leaf to the soup, stir it and allow simmering for some minutes.
- Add your chopped fruited pumpkin leaves and chopped onions, stir the soup and allow it simmering for 2mins. Boom! Your soup is done!
My leafy greens soup with Fufu
We used to eat this soup with Eba, fufu, rice or semovita, I normally take it as lunch since it's heavy meal. We served Edikan Ikong Soup as one of the meals to the grooms family on traditional marriage ceremony day.

This week's meal is looking yummy. It is called usùm ubonn in my language.
Edikan iKon is one special meal I enjoy eating. Infact I have this calabar kitchen I always visit over here in Lagos. The woman don chop my money tire but with this wonderful tutorial from you, am so sure that woman no go see me again.

I've been hearing about his soup since I knew my left from my right but have never tasted it..lol
How good it is to learn how it is been prepared on the platform.
