Hello dear gourmets, this is my post for this Monday: White cabbage soup in Greek style with flatbread. Thank you very much to @lenasveganliving and hosted by @plantstoplanks!

Cabbage, from him there are many varieties and in each of these leaves hides quite a lot of strength. He gives your body a lot of vitamin C and folic acid and you a lot of life energy. especially when grown on a healthy soil by the power of the sun and the earth. He carries life in himself and is therefore a real food ๐Ÿ˜

Ingredients for the cabbage soup

  • 1/2 white cabbage head approx. 1 kg
  • 2 potatoes
  • 1 carrot
  • 2 large tomatoes or 6 small tomatoes
  • 1 onion
  • 4 cloves of garlic
  • 2 tablespoons dill
  • 1 tbsp thyme dried
  • 1 tsp pepper
  • Salt to taste
  • 2 tablespoons of lemon juice
  • 6 tbsp olive oil
  • 2 liters of water or vegetable broth

Ingredients for the flatbread

  • 360 g Wheat Flour Pastry Flour
  • 14 g fresh yeast
  • 216 g of water
  • 36 g sweet lupine milk
  • 8 g salt
  • 4 g of sugar
  • 1 tbsp sesame
  • 1 tbsp caraway or black cumin
  • 1 tbsp olive oil

some Sesame and caraway to sprinkle

I know these ingredients sound a bit funny, but please weigh them off as well!

Prepare dough

This yeast dough is made with cold water and cold milk, so it is important that you prepare the dough for at least 12 hours before baking and put it in the fridge overnight!

Place the milk and sugar in a container, add the yeast and stir, then rest for 15 minutes, until the sugar and yeast have dissolved.

Put the flour, salt, sesame and caraway in the mixing bowl and mix with a whisk. Add the dissolved yeast milk and the water to the flour and knead for 20 minutes in the food processor.

Then place the dough in another bowl, sift some flour over the dough, cover the bowl with cling film. Pierce several holes in the foil and place the dough in the fridge for at least 12 hours.

After the rest time, gently knead the dough by hand again, but do not press out all the air, then place the dough on a long-life foil. Carefully press the dough with your hands slightly flat and round (it should be about 24 cm in diameter). The dough sticks something - that's right.

Now spread the cumin and sesame on the dough to your taste and press down with the palm of your hand. Cover the dough with a cloth and let it rest at room temperature for 45 minutes.

Preheat the oven to 250 ยฐ C!

Spread the olive oil over the dough before baking and press 12-16 forks into the dough surface. Place the dough with the baking foil on a wire rack. Do not take a baking tray!

Bake for 3 minutes at 250 ยฐ C on the middle slot, the oven door will remain ajar during this time.

Then switch to 220 ยฐ C. Overall, the bread needs about 15-20 minutes.

Preparation of soup

Cut the cabbage into small pieces of about 1x1 cm, Cut the cabbage into small pieces of about 1x1 cm, also chop the remaining vegetables into small pieces.

Heat the olive oil in a large saucepan and fry the onion for 2 minutes (medium heat). Add garlic and fry for another 2 minutes. Add garlic and fry for another minute. Add the dill and thyme and cook for another 3 minutes. Add the carrots, mix well with the oil and fry for 3 minutes. Add potatoes, mix well and fry for another 5 minutes. Add the cabbage, mix well and leave to fry for 10 minutes.

Add the water and the tomatoes and bring to a boil and simmer for 20 minutes.

Switch off the stove and add pepper and lemon juice.

Serve soup with the flatbread, Enjoy your meal ๐Ÿฅฐ

That bread looks perfect! You and @gguy773 totally rock the homemade bread. I'm definitely going to try this one as it looks fantastic. Of course I wouldn't turn away that yummy soup either. I'll take a good cabbage soup any day of the week at any time of the year!
