Fruits and Veggies Monday | Bird’s Pineapple Triple Threat!

Happy Monday my Fruits and Veggie Ninjas!


I trust you all had a wonderful weekend filled with a little R&R and lots of good food! Our weekend was great, and HOT which generally leads to cool meals! How about you?


I noticed last week was the 2 year anniversary for Fruits and Veggies Monday. Unfortunately life often gets in the way and we miss out on things. Appointments, checkups and more appointments had the Bird nest all in a twitter so although I had planned my post I wasn’t able to join in on the celebration.

we want to congratulate our dear founder @lenasveganliving and our awesome hostess @plantstoplanks for this awesome milestone! Wow, 2 years! That’s a lot of fruits and veggies! I bet you’ve seen just about every fruit and veggie on this planet! (Although perhaps I still have a few under my wing to share, lol)


We are so grateful, thank you both for taking the time and effort to bring us all together each week! You’re both so inspiring and definitely keep the bar pretty high! Cheers to our awesome sponsor @donkeypong and another great year my friends!


Meanwhile, I found the perfect pineapple…


at the market last week. As we all know, one pineapple produces a lot of fruit, right? After a little chopping action, I had produced a bowl of pineapple and a then some!

Just in time for breakfast so how about juice!


Needless to say, we found quite a few other fruits and veggies to join in! Fresh beets, carrots, cucumbers, apples, lemons, spinach! Time to grab the juicer!

Now that I was supercharged with healthy vitamins and minerals I was ready to go! Pineapple tarts sounded pretty good to me! I headed for the pantry; I knew just what I needed.


Pineapple Tarts

The Figgy Crust

  • Dried Figs (qty 6)
  • Almonds (1/2 cup)
  • Coconut Oil (2 tbsp.)

Pineapple Crème

  • Thai Coconut Crème (1 can)
  • Fresh Pineapple (3/4 cup)
  • Yacon or Maple Syrup (to taste)

As a side note…


are you familiar with Yacon Syrup? As you know, I’ve been testing sugar alternatives lately and I’ve found another! Yacon syrup is derived from the Yacon Plant which is grown in the Andes Mountains. It has been used for centuries medicinally to treat digestive, diabetic and kidney problems. Yacon contains one of the highest concentrations of Fructans, a beneficial dietary fiber known to help feed your healthy gut bacteria! I thought this was something worth checking out!

Good old Walter…


the food processor was ready to do the work! He pulsed those almonds and figs until they were just right. After checking the consistency I added the coconut Oil, gave it another quick pulse and voila! Perfect crust for the tarts!

Blend the pineapple…


crème ingredients until they’re light and fluffy! Feel free to taste and add additional sweetener if you wish!. Layer fresh pineapple on the figgy crust and top with pineapple crème! Now into the freezer for at least 3 hours.

Leftover crème?


No problem! How about popsicles! Morning juice and pineapple crème make amazing frozen treats!

I'll take one of each, please! I am always happy to see the same item multiple ways. Such a great way to stay on a budget and minimize food waste. Though delicious fruit rarely gets wasted around the Monday group. :) Pineapple is definitely one of my favorites, though I haven't bought any in a while since we've been getting so much local fruit. That tart looks especially delicious! I've never seen the yacon before, but I'll have to keep an eye out next time I visit Whole Foods or one of the other local natural grocers.

You know I am just learning from you my friend! You are the wizard of triple and quadruple recipes at once. As for the pineapple...I have a secret to share...I am growing my own!!!!! I'm so excited, and will share when the little pineapple starts to bloom...its really fun! :) And, now it will be local pineapple!!!!! Perhaps Whole Foods would have Yacon, it is ;ight, nicely flavored with no aftertaste. The health benefits are an added benefit! Let me know what you think if you find it!! Thanks Katie!

Oh yay! We've tried to grow pineapple, but it definitely still gets too cold here in the winter for it to stay alive. That will be awesome to have some of your own fresh from the yard! I will definitely keep an eye out for the Yacon and let you know. :)

Well thank you @tattotodjay :) Yacon syrup was new to me as well, quite tasty I must say and the health benefits make it even more attractive :) We do love our popsicles, especially right now! lol

Your smoothie, tarts and popsicles look delicious. I have never seen yacon syrup to be honest but well I also didn't look for it :) I usually stick to dates or agave but I'll try this one as soon as I see it in the shop.

Funny you mention allergies, I just found out I'm allergic to fresh jackfruit! One of my friends bought one and asked me if I'd like some since they are so big. I've only had young jackfruit in cooked preparations, so I didn't realize the raw makes my mouth and throat itchy and tingly! I read that cooking can help deactivate the proteins that trigger the reaction, so I'm currently working on jackfruit oatmeal. We'll see how that works out. At least we have plenty of other yummy fruits to enjoy, right? :)

What!!!! oh my goodness allergic to pineapple and now you @plantstoplanks jackfruit! Yikes be careful, that can be scary. I love dates as well @delishtreats, I'm just experimenting with alternatives to see what's available and and a good substitute! hello dear @birdsinparadise, a great post today! three recipes in one, a deal for us that we read! I love the anans, in all the ways you will cook it I will eat it :-)) I was very impressed by the comment by @artemislives that in Thailand food processors are so expensive, I couldn't imagine it! but I remember that when I was little my mom and I used to make cakes by mixing everything with the wooden ladle (even whipping the egg whites !!)

We live on pineapple all year round here in Thailand - amazing post.

I LOVE your recipe posts but they frustrate me - no food processors for many people (you need a mortgage here in Thailand, and then some) and the packaged ingredients are simply not available. I'd so love to see more recipes using just a bowl and spoon, the way we still prepare food out here in the big, wide, real world. Just putting my special request in.... :)

Good point! If I hadn't been gifted my food processor 42 years ago by my father I probably wouldn't have one either! :) Using a mortar and pestal is always handy for crushing those nuts! I certainly don't mean to frustrate you @artemislives! There are so many products from all of the world which I can't get as well, many the fabulous fruits, vegetables and herbs you have I wish I could find! I'll plan to whip up something you'll enjoy so stand by my friend :)
