ZOODLES WITH HOMEGROWN CHERRY TOMATOES AND SUN-DRIED TOMATO PESTO (#fruitsandveggiesmonday)

It's #fruitsandveggiesmonday again! So when life gives you fresh homegrown cherry tomatoes and regular tomatoes from an organic farm..... It's time to make sundried tomatoes and a lovely tomato dish.

If you never made your own sundried (actually oven-dried) tomatoes you will be amazed by the process. It is so simple you probably will ask yourself why you never tried this too.

Before we get started, let me thank @lenasveganliving and @plantstoplanks for making this weekly contest happen. And congrats again to the winner of last week and this week's honorable judge @fitinfunfood .

To start, let me introduce you to the rock stars of this yummy dish. They are grown at home with lots of love and we definitely tasted that in this dish.

SUN-DRIED TOMATOES


INGREDIENTS


1-2 kg tomatoes, depending on how big your oven is
Sea salt and black pepper
Extra virgin olive oil
Optional: your favorite Italian herb mix

FYI: recipe makes more than you'll need, but they are so good. I am sure they won't last long.

DIRECTIONS


  1. Preheat oven to 200 degrees F (95 degrees C).
  2. Wash the tomatoes and cut them in parts, gently squeezing out the seeds. Place the tomatoes on a baking sheet. 3. Sprinkle with salt, black pepper, and olive oil.
  3. Bake until tomatoes take on a leathery texture. This will take 6 to 8 hours. Toss the tomatoes every 1 to 2 hours. Smaller pieces will go faster.
  4. When ready allow tomatoes to cool and store them in olive oil in a jar or container with a lid.

ZOODLES WITH HOMEGROWN CHERRY TOMATOES AND SUN-DRIED TOMATO PESTO

INGREDIENTS (SERVES 2)


1 zucchini spiralized
1 carrot spiralized
1-12-/2 cup cherry tomatoes, halved
1/2 cup onion
1cup celery

For the sun-dried tomato pesto


3/4 cup sun-dried tomatoes
3 cloves of garlic
1/3 cup roasted sunflower seeds
1/4-1/3 cup olive oil
1/2 cup fresh parsley
Sea salt and black pepper to taste

DIRECTIONS


  1. In a blender, process all pesto ingredients until a paste. Set aside.
  2. Spiralize zucchini and carrot.
  3. Saute cherry tomatoes, onion and garlic in a pan for 5 minutes.
  4. Add spiralized veggies and cook until heated through.
  5. Add pesto and divide over bowls.
  6. Top with extra roasted sunflower seeds and parsley if you like.

Home grown sun dried tomatoes sounds epic! I have made sun dried tomatoes before but I had to buy my tomatoes as I don't have a garden so I'm sure that your tasted better...

I'm not such a big fan of zoodles so I would probably use normal pasta but I will definitely try your sun dried tomato pesto. It sounds like a perfect sauce for pasta!

For some reason I thought that the name zoodles comes from zucchini so I didn't even think that there could be other sort of them :D But how do you make them then? Do you cook them or steam them before you put the sauce on them? It actually sounds quite nice to make them from sweet potatoes. Can imagine it would taste good :)

I've started to make many things at home so I'm excited to do the sun dried tomatoes again.. these days I'm focusing on fermenting and doing my first ever Sauerkraut! :)

The name comes from zucchini indeed but you can use other veggies too. You can either use a spiralizer, juiliene peeler or normal peeler for fettuccine like pasta. Just cook them a few minutes in a pan with cooking oil and there are good to go.

Love fermenting to. We make our own Kimchi, coconut yogurt, pickles and kombucha. Have a great day.

they look delicious, I have never dried tomatoes myself, I had many tomatoes in the garden last year, made tomato sauce and deep-frozen.

It is so easy. Though we live in the ideal climate to dry them in the sun, the oven is so much easier and bug-free hehe. Thanks for stopping y and I hope you try to make them this year.

Oh my goodness Amy, not only I love sun dried tomatoes, but cherry tomatoes are my favorite, especially if they are homegrown. Also, the recipe is beyond delicious and the photos are outstanding. I suppose I can take a bowl of veggies to hold me over until fruit season. 😉 I do love sun-dried tomatoes! I'm sure these were jam-packed with flavor, too. We're hoping for some better tomatoes in our garden this year, so maybe I can finally try these myself. 🍅

Bad year for growing last year? Here they expect another el nino so I hope the rest of my experiments work out. We'll see. Fruits always work it seems. Let's hope we all get an abundance of fresh homegrown fruits and veggies. Nothing beats their taste.
